A hearty and flavorful Zucchini Potato Bake featuring thinly sliced zucchini, russet potatoes, and colorful bell peppers tossed in olive oil, garlic, nutritional yeast, and breadcrumbs, then baked to perfection. This comforting vegetarian casserole combines tender vegetables with a crunchy topping, making it a perfect side or main dish.

  • Total Time: 1 hour 15 minutes
  • Yield: 6 servings

Ingredients

Vegetables

  • 3 medium zucchini, halved lengthwise and thinly sliced (about ¼-½ inch thick)
  • 3 large russet potatoes, halved lengthwise and thinly sliced (about ¼-½ inch thick)
  • 1 small red or yellow onion, diced
  • 1 small red or green bell pepper, diced

Other Ingredients

  • ¼ cup olive oil
  • 3 small garlic cloves, minced
  • ¾ cup nutritional yeast
  • ½ cup dry bread crumbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven: Preheat your oven to 400 degrees F (200 degrees C) to ensure it is ready for baking the casserole evenly.
  2. Combine ingredients: In a large bowl, add the olive oil, minced garlic, diced onion, diced bell pepper, sliced zucchini, sliced potatoes, nutritional yeast, bread crumbs, and salt and pepper. Toss everything together well until all the vegetables and seasonings are evenly coated with the mixture.
  3. Transfer to baking dish: Spread the combined mixture evenly into a 9×13-inch casserole dish to ensure uniform cooking and browning.
  4. First bake: Bake the casserole uncovered in the preheated oven for 30 minutes, allowing the vegetables to begin softening and the topping to start crisping.
  5. Stir and continue baking: Carefully stir the casserole to redistribute the ingredients and promote even cooking. Return it to the oven and bake for another 30 minutes. Watch closely during the last 10 minutes to prevent over-browning or burning.
  6. Rest before serving: Remove the casserole from the oven and let it sit for a few minutes to set and cool slightly for easier serving. Then serve warm.

Notes

  • Do not slice the vegetables too thin; slices between ¼ and ½ inch thick prevent mushiness and maintain a pleasant texture. Using a mandoline at ¼-inch thickness helps achieve even slices.
  • If the top browns too much before the vegetables are tender, cover the dish with foil to continue baking without burning.
  • For a crisper and more browned top layer, broil the casserole for a few minutes at the end of baking, watching carefully to avoid burning.
  • For a softer center, you can bake the dish covered for the first 30 minutes, then uncover for the remaining baking time.
