This refreshing Zucchini Pasta (Zoodles) with Avocado Sauce is a light, healthy alternative to traditional pasta. Featuring spiralized zucchini noodles tossed in a creamy, tangy avocado sauce blended with fresh cilantro and lemon juice, this dish is perfect for a quick meal that’s both satisfying and nutrient-packed. Ideal for summer or anytime you want a gluten-free, low-carb, and flavorful recipe.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Zucchini Pasta

  • 3-4 large or 5-6 small zucchini
  • 1 teaspoon olive oil
  • 3 cloves garlic, crushed or minced

Avocado Sauce

  • 2 ripe avocados, pitted and peeled
  • ⅓ cup loosely packed fresh cilantro (large handful)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • Water, as needed (2-3 tablespoons, optional)

Instructions

  1. Prepare the Zucchini Noodles: Slice off the ends of the zucchini and use a spiralizer to create noodles. This forms the base of your dish with fresh, vegetable-based pasta.
  2. Cook the Garlic: Heat a large pan over high heat. Add 1 teaspoon of olive oil followed by the crushed or minced garlic. Cook for just a few seconds until the garlic turns golden to release its aroma without burning it.
  3. Cook the Zucchini Noodles: Add the spiralized zucchini noodles to the pan and toss well to combine with the garlic. Cook just for a few seconds to slightly warm the noodles but keep their crispness. Remove the pan from heat and set aside to cool.
  4. Make the Avocado Sauce: In a blender, combine the ripe avocados, fresh cilantro, lemon juice, olive oil, salt, and black pepper. Blend until creamy and smooth. Optionally, add 2-3 tablespoons of water to achieve a pourable consistency.
  5. Toss and Serve: Pour the avocado sauce over the slightly cooled zucchini noodles. Toss gently to coat the noodles evenly. Garnish with grated parmesan or extra chopped cilantro if desired. Serve warm or at room temperature for the best flavor.

Notes

  • Use a spiralizer for authentic zoodles; a julienne peeler can work as an alternative.
  • Do not overcook zucchini noodles as they can become soggy quickly.
  • Adjust seasoning of the avocado sauce to taste, particularly salt and lemon juice.
  • This dish is best eaten fresh but leftovers can be stored covered in the refrigerator for up to 1 day.
  • For a vegan version, omit parmesan garnish or use a plant-based cheese alternative.
