Ingredients
For the Meat:
- 2.2 lb (1 kg) Ground beef or lamb (or a mix)
- 1 Onion, grated
- 3 Garlic cloves, grated
- ¼ cup (60 g) Plain yogurt
- 2 tablespoons (30 ml) Olive oil
- Salt, to taste
- Pepper, to taste
- 2 teaspoons Cumin
- 1 tablespoon Sweet paprika
- 2 teaspoons Oregano
- ½ teaspoon Cayenne pepper (optional)
- 2 tablespoons Tomato paste or BBQ sauce
For Serving (to taste):
- Warm pita or a large tortilla
- Shredded lettuce or cabbage
- Red onion, sliced
- Pickles
- Tahini sauce (optional)
- Tzatziki (optional)
- Fresh parsley (optional)
Instructions
- Prepare the meat mixture: In a large bowl, combine the ground meat, grated onion and garlic, plain yogurt, tomato paste, salt, pepper, sweet paprika, cumin, oregano, cayenne pepper (if using), and olive oil. Mix thoroughly with your hands until the mixture becomes sticky and holds together well, an important step to achieve the authentic doner texture.
- Form the viral ‘meat sheet’: Divide the meat mixture into 5 equal portions. Place a large piece of parchment paper on the counter, set one portion of meat on top, then cover with another parchment sheet. Use a rolling pin to spread the meat into a very thin and even rectangle, pressing out any air pockets and keeping the thickness consistent.
- Roll it up: Remove the top parchment sheet carefully. Starting from the long edge, use the bottom parchment to roll the thin meat sheet tightly into a compact log, similar to a Swiss roll, twisting the ends to secure the shape firmly.
- Bake: Preheat your oven to 200°C (400°F). Place the wrapped meat roll on a baking tray and bake in the oven for 20 to 25 minutes, until cooked through and lightly browned but still juicy.
- Slice: Let the baked meat roll rest for 5 minutes. Then slice it thinly across the log and use two forks to shred slightly, creating the authentic doner kebab texture.
- Assemble: Warm your pita or tortilla and stuff it with the sliced doner meat. Add shredded lettuce or cabbage, sliced red onion, pickles, and any preferred sauces like tahini or tzatziki. Garnish with fresh parsley if desired and serve immediately for best flavor and texture.
Notes
- Meat Choice: Ground beef, lamb, chicken, or turkey all work, with lamb providing the most authentic flavor. A beef-lamb mix (70/30) balances taste and texture well.
- Fat Content: Use ground meat with 20-30% fat to keep kebabs juicy. Add extra olive oil if using leaner meat to prevent dryness.
- Spice Variations: Adjust spices to taste by adding more chili, smoked paprika, or cinnamon for different flavor profiles. Pre-mixed shawarma or gyro spices can also be used.
- Thickness: Roll the meat sheet as thinly as possible for authentic texture.
- Yogurt Substitute: Use mayonnaise or extra olive oil for a dairy-free version.
- Avoid Overbaking: Remove from oven as soon as the meat is cooked through to maintain juiciness.
- Storage: Store leftovers in airtight containers in the fridge up to 4 days; reheat in a pan or air fryer to restore texture.
- Serving Suggestions: Great in pita, wraps, rice bowls, or salads with fresh veggies and sauces.
- Make-Ahead: Meat mixture and shaped sheets can be prepared and refrigerated up to 24 hours before baking.
