Ingredients
For the Steaks:
- 10 oz vegan ground beef
- 1/3 cup breadcrumbs (use gluten-free if desired)
- 1 Tbsp olive oil
- 2 Tbsp dairy-free butter
- 1 tsp mustard
- 2 Tbsp tamari
- 2 Tbsp ketchup
- 1 tsp smoked paprika
- 2 tsp Italian herbs
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
For the Gravy:
- 2 cups vegetable broth
- 1 tsp onion powder
- 8 oz mushrooms, sliced
- 1 tsp garlic powder
- 1 Tbsp ketchup
- 1 tsp Italian herbs
- 3 Tbsp dairy-free butter
- 1 tsp mustard
- 1 tsp cornstarch
- Salt and pepper to taste
Instructions
- Prepare the Steaks: In a large mixing bowl, combine the vegan ground beef, breadcrumbs, onion powder, garlic powder, smoked paprika, mustard, ketchup, tamari, Italian herbs, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
- Form Patties: Shape the mixture into 3 oval-shaped patties, each approximately 3/4 inch thick.
- Cook the Patties: Heat the dairy-free butter and olive oil in a large skillet over medium heat. Add the patties and cook for about 3 minutes on each side until browned. Remove the patties from the pan and set aside, leaving the fat and browned bits in the pan for flavor.
- Make the Gravy Base: To the same skillet, add the remaining dairy-free butter and the sliced mushrooms. Season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook the mushrooms until they are nicely browned and softened.
- Prepare the Slurry: In a small bowl, mix 2 teaspoons of vegetable broth with 1 teaspoon of cornstarch until smooth to create a slurry.
- Combine Gravy Ingredients: Pour the remaining vegetable broth into the skillet with the mushrooms. Stir in the ketchup, Italian herbs, tamari, mustard, and the cornstarch slurry. Bring the mixture to a simmer, stirring frequently, until the gravy thickens.
- Finish Cooking: Return the patties to the skillet with the gravy. Spoon gravy over them and cook for an additional 5 minutes to allow the flavors to meld and the patties to heat through.
