This Vegan Cheese Fondue recipe offers a creamy, tangy, and stretchy plant-based alternative to traditional cheese fondue. Made with fermented cashew cream, nutritional yeast, and tapioca starch, it delivers rich flavor and a perfect melt without dairy. Ideal for cozy gatherings, this fondue pairs wonderfully with bread and vegetables.

  • Total Time: 12 to 48 hours 15 minutes
  • Yield: Approximately 4 servings

Ingredients

Cashew Cream

  • 1 cup (140 g) raw cashews soaked overnight
  • 1 cup (240 ml) water
  • 1 capsule probiotics

Fondue

  • 1/2 cup (120 ml) white wine
  • 2/3 cup (160 ml) water
  • 3 tbsp (33 g) nutritional yeast
  • 2 tbsp (30 ml) oil (optional, for a richer flavor)
  • 1/4 cup (30 g) tapioca starch
  • 1 tbsp (15 g) sweet white miso
  • 2 tsp (5 ml) maple syrup
  • 1/2 tsp onion powder
  • 1 and 1/2 tsp (7 ml) annatto oil or 1/8 tsp turmeric
  • 3/4 tsp salt (1/2 and 1/4 tsp)
  • 1/2 clove garlic

Instructions

  1. Prepare Cashew Cream: Drain the soaked cashews and transfer them to a high-speed blender. Add the water and blend on high for 20-30 seconds or until smooth and creamy.
  2. Ferment Cashew Cream: Transfer the cashew cream to a clean jar. Add the powder from one capsule of probiotics and stir it in with a wooden spoon. Cover the jar with plastic film or a clean cheesecloth and let it ferment at room temperature for about 24 hours, up to 48 hours. The cream is ready when you see bubbles and it has a tangy flavor.
  3. Blend Fondue Ingredients: Transfer the fermented cashew cream to a blender. Add white wine, water, nutritional yeast, oil (if using), tapioca starch, sweet white miso, maple syrup, onion powder, annatto oil or turmeric, salt, and garlic. Blend for 15-20 seconds until smooth. The mixture will be very liquid, which is normal.
  4. Cook the Fondue: Pour the fondue batter into a large saucepan and heat over medium heat. Whisk constantly until the mixture thickens and becomes stretchy, approximately 5 minutes.
  5. Serve: Serve the fondue immediately or transfer to a fondue set to keep warm. Enjoy by dipping pieces of bread or vegetables into this creamy vegan cheese fondue.

Notes

  • Soak cashews overnight for best texture and ease of blending.
  • Fermentation time can vary with room temperature; longer fermentation increases tanginess.
  • Annatto oil or turmeric provides color; adjust based on preference for color intensity.
  • Oil is optional but adds richness to the fondue.
  • Use a high-speed blender for best creaminess.
  • Constant whisking while cooking prevents lumps and ensures smooth, stretchy texture.
  • Store leftover fondue refrigerated and reheat gently while whisking to restore texture.
