Ingredients
General Ingredients
- Nonstick cooking spray for oven directions
- 1 ball Homemade Pizza Dough or store-bought (1 pound)
- ¾ cup prepared pizza sauce
- 1 cup cooked and pulled/chopped chicken
- ½ cup roasted garlic cloves from 3 heads
- 8 ounces fresh mozzarella cheese, sliced
- 1 tablespoon Everything Bagel Seasoning
- ½ cup fresh basil leaves, torn
For Grill Directions
- 2 tablespoons olive oil, divided (for brushing dough)
Instructions
- Oven Preparation: Preheat your oven to 400°F (200°C). Spray a large pizza pan with nonstick cooking spray. Toss and stretch the pizza dough into a 14-inch circle and place it on the prepared pan.
- Par-Bake Pizza Crust: Transfer the dough to the oven and bake for 10 minutes. This step ensures the crust starts getting firm and slightly cooked before adding toppings.
- Add Toppings for Oven Method: Remove the partially baked crust from the oven. Spread the pizza sauce evenly over the crust. Top with the cooked chicken, roasted garlic cloves, sliced fresh mozzarella, and sprinkle the Everything Bagel Seasoning on top.
- Finish Baking Pizza in Oven: Return the pizza to the oven and bake for an additional 6 to 8 minutes, or until the cheese is melted, chicken and garlic are warmed through, and the dough is fully cooked.
- Add Fresh Basil and Final Bake: Sprinkle the torn basil leaves over the pizza, then bake for another 2 minutes to wilt the basil slightly. Remove from oven, cut, and serve immediately.
- Grill Preparation: Preheat your grill for two-zone grilling: set half the grill to medium-high (direct heat) and leave the other half off (indirect heat).
- Prepare Dough for Grilling: Stretch and shape the dough into a 14-inch circle and place it on a pizza pan or large tray. Brush one side of the dough with 1 tablespoon of olive oil.
- Grill First Side of Dough: Carefully transfer the dough, oiled side down, to the direct heat side of the grill. Cook for 2 minutes or until the dough releases easily from the grates, then flip.
- Grill Second Side of Dough: Brush the other side of dough with the remaining 1 tablespoon olive oil. Cook for 2 minutes until dough releases from the grates, then continue cooking 3 to 4 minutes longer, flipping and rotating frequently. The dough should become firm and develop grill marks.
- Add Toppings for Grill Method: Remove the grilled dough from the heat. Spread pizza sauce over the crust and top with chicken, roasted garlic cloves, mozzarella slices, and Everything Bagel Seasoning.
- Cook Pizza on Indirect Heat: Transfer the topped pizza to the indirect heat side of the grill. Close the lid and cook for 8 to 10 minutes until the toppings are warmed through and the crust is fully cooked.
- Finish and Serve Grilled Pizza: Remove the pizza from the grill and top with fresh torn basil. Slice and serve immediately.
Notes
- The easiest way to get roasted garlic cloves is to buy a scoop from the olive bar at an upscale grocery store.
- To roast garlic at home: Preheat oven to 400°F (200°C). Trim the tops of 3 whole garlic heads so that cloves are exposed. Wrap the heads in foil and bake for 50 to 70 minutes until soft and golden brown. Let cool 10 minutes, then squeeze cloves out of skins.
- Roasted garlic can be prepared up to 3 days in advance and kept in a covered container refrigerated until ready to use.
