Ingredients
Dip Ingredients
- 24 oz sour cream (light or regular)
- 2 cups shredded Colby Jack cheese (or cheese of choice)
- 1 packet taco seasoning (homemade or store-bought)
- 1 packet ranch seasoning (homemade or store-bought)
- 10 oz can Rotel with chiles, drained
Optional Substitute
- Greek yogurt or blended cottage cheese (to replace sour cream for more protein)
Instructions
- Mix the Base: In a bowl, combine the sour cream with taco seasoning and ranch seasoning. Stir thoroughly to ensure the spices are evenly distributed throughout the sour cream.
- Add Cheese and Rotel: Stir in the shredded Colby Jack cheese and the drained Rotel with chiles. Add a pinch of salt to taste and mix everything well until fully combined.
- Chill the Dip: Cover the bowl and refrigerate the dip for 30 minutes to 1 hour. This chilling time allows the flavors to meld and the texture to thicken, resulting in a creamier and more flavorful dip.
- Serve: Serve the dip chilled alongside chips or fresh vegetables for dipping. If you need to store leftovers, place them in an airtight container and refrigerate for up to three days, giving it a good stir before serving again.
Notes
- Always drain the Rotel well before mixing it in to avoid a watery dip, especially if it sits out for a while.
- Chilling the dip for at least 30 minutes improves flavor melding and gives a thicker, creamier texture; up to an hour is even better.
- Adjust the heat level by choosing Mild, Hot, or Regular Rotel with green chiles according to your preference.
- This dip is perfect for making ahead as the flavor improves after resting in the fridge.
- Store leftovers in an airtight container in the fridge for up to three days and stir before serving again.
- If serving outdoors, keep the dip in a cooler or on ice to maintain the cold creamy texture.
