Ingredients
Cauliflower Wings
- 1 head cauliflower, cut into florets
- 1 cup oat flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- 1 cup non-dairy milk
- 1 ½ cups quick oats or crushed crackers
Teriyaki Sauce & Garnish
- 1 cup teriyaki sauce
- Sesame seeds, to sprinkle
- Chopped spring onions, to sprinkle (optional)
Instructions
- Preheat the oven: Preheat your oven to 220ºC (425ºF) and line a large baking sheet with baking paper to prevent sticking and ensure easy cleanup.
- Prepare cauliflower florets: Cut the cauliflower into small, relatively even-sized florets to ensure they cook evenly and achieve a crispy texture throughout.
- Make the batter: In a medium to large bowl, whisk together the oat flour, non-dairy milk, garlic powder, onion powder, salt, and a pinch of black pepper until smooth and free of lumps.
- Coat the cauliflower: Toss the cauliflower florets in the batter until each piece is fully coated, using a spatula or spoon for even coverage.
- Bread the florets: Transfer the coated cauliflower to a bowl of quick oats or crushed crackers, rolling them around until well coated for added crunch.
- Arrange and bake: Place the coated cauliflower pieces in a single layer on the prepared baking sheet, spacing them evenly to allow crisping. Bake for 22-25 minutes or until golden and crisp.
- Prepare teriyaki sauce: While baking, pour the teriyaki sauce into a large shallow bowl. If it is very thick, dilute with a few tablespoons of water to make it easier to coat the cauliflower.
- Coat with teriyaki: Dip each baked cauliflower piece into the teriyaki sauce or brush the sauce onto them, ensuring each piece is well-coated.
- Second bake: Return the coated cauliflower to the baking sheet and bake for an additional 5-10 minutes to set the sticky sauce and enhance the flavor.
- Garnish and serve: Remove from the oven, sprinkle with sesame seeds and optional chopped spring onions, then serve immediately for the best texture and flavor.
Notes
- Using oat flour and non-dairy milk makes this recipe both gluten-free and vegan-friendly.
- For an extra spicy kick, add some chili powder or cayenne pepper to the batter.
- Alternate coatings such as crushed gluten-free crackers work well to vary texture.
- Make sure the cauliflower florets are dry before coating to improve batter adhesion.
- Serve with additional teriyaki sauce or a side of vegan ranch for dipping.
