Ingredients
Fish
- 4 cod fillets
- 1 tablespoon olive oil
- Salt and pepper to taste
Sauce
- 1 can (13.5 oz) coconut milk
- 2 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
- 2 garlic cloves, minced
- 1 tablespoon grated ginger (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Garnish
- Fresh parsley or cilantro for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the cod fillets.
- Prepare Cod: Lightly grease a baking dish to prevent sticking, then place the cod fillets inside. Drizzle the fillets with olive oil and season with salt and pepper evenly to enhance their natural flavors.
- Make Sauce: In a saucepan over medium heat, combine the coconut milk, lemon juice, lemon zest, minced garlic, and grated ginger. Bring the mixture to a gentle simmer, allowing the flavors to meld together.
- Thicken Sauce: Stir in the cornstarch slurry gradually to the simmering sauce while stirring continuously. Cook until the sauce thickens slightly, ensuring a creamy consistency that will coat the fish well.
- Bake Cod: Pour the creamy coconut lemon sauce evenly over the cod fillets in the baking dish. Place the dish in the preheated oven and bake for about 20 minutes, or until the fish flakes easily when tested with a fork.
- Garnish and Serve: Once baked, garnish the cod with freshly chopped parsley or cilantro for a burst of color and herbaceous aroma. Serve hot alongside your choice of rice, quinoa, or steamed vegetables.
Notes
- Use fresh lemon juice for the best and most vibrant flavor in the sauce.
- This dish pairs excellently with rice, quinoa, or steamed vegetables for a complete meal.
- For a spicy kick, add a pinch of red chili flakes to the sauce while cooking.
