Ingredients
Sweet Potatoes
- 4 Sweet potatoes
Taco Meat
- 1 lb Ground turkey
- 1 Taco seasoning packet
Toppings
- 1 large Tomato, diced
- 1 (4 oz) can Sliced black olives
- ½ cup Mexican blend cheese
- ½ cup Guacamole
- Cilantro, chopped
Instructions
- Prepare the Sweet Potatoes: Pierce each sweet potato several times with a fork to allow steam to escape during cooking.
- Preheat the Air Fryer: Set your air fryer to 400°F and preheat it for 5 minutes to ensure even roasting.
- Cook Sweet Potatoes: Place the pierced sweet potatoes into the air fryer basket and cook for 40 to 45 minutes, flipping halfway through. Cook until they are tender and can be easily pierced with a fork. Adjust cooking time based on size.
- Prepare Taco Meat: While the sweet potatoes cook, brown the ground turkey in a skillet over medium heat on the stovetop. Once cooked through, add the taco seasoning packet along with any required water according to the seasoning instructions, and simmer until well combined and heated through.
- Assemble the Stuffed Potatoes: When sweet potatoes are done, carefully cut a slit lengthwise across the top of each. Use a fork to fluff the inside flesh gently.
- Add Taco Meat and Cheese: Spoon a generous amount of the seasoned turkey into each sweet potato. Sprinkle with Mexican blend cheese and return to the air fryer for 1 minute, or until the cheese is melted.
- Add Toppings and Serve: Top with diced tomatoes, sliced black olives, guacamole, and chopped cilantro. Serve immediately and enjoy the flavorful combination.
Notes
- The air fryer cooking time can vary depending on the size of the sweet potatoes and the model of your air fryer—larger potatoes may require a longer cooking time.
- You can bake the sweet potatoes in a conventional oven at 400°F for 45-60 minutes as an alternative to air frying.
- An Instant Pot can also be used to cook the sweet potatoes faster using the pressure cook setting (about 15-20 minutes).
- Feel free to add other favorite taco toppings like salsa, jalapeños, or sour cream to customize the dish.
