Ingredients
Main Ingredients
- 1 lb. ground beef
- 1 ½ tablespoons taco seasoning mix
- ½ cup water
- ½ cup salsa con queso
- 3 8-inch flour or corn tortillas
- 2 cups shredded Mexican cheese blend or cheddar cheese
- Sour cream for serving
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Cook Beef: Heat a little oil in a large skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until fully browned and no longer pink, about 6-8 minutes.
- Season Beef: Stir in the taco seasoning mix and ½ cup water into the browned beef. Let the mixture simmer for 2-3 minutes to allow the flavors to blend, stirring occasionally.
- Add Salsa Con Queso: Stir in the ½ cup of salsa con queso to the seasoned beef mixture, then remove the skillet from heat.
- Prepare Baking Dish: Lightly spray an 8-inch round baking dish or tin with cooking spray to prevent sticking.
- Layer Casserole: Place one tortilla at the bottom of the baking dish. Spread one-third of the beef mixture evenly over the tortilla, then sprinkle with one-third of the shredded cheese. Repeat these layers two more times, finishing with cheese on top.
- Bake: Bake the layered casserole in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Cool and Serve: Allow the casserole to cool for a few minutes before slicing. Serve warm, topped with sour cream as desired.
Notes
- You can use either flour or corn tortillas based on preference or dietary needs.
- For a spicier kick, add chopped jalapeños or a dash of hot sauce to the beef mixture.
- This casserole can be made ahead and refrigerated before baking; just add extra baking time if baking from cold.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
- To make it gluten-free, ensure you use corn tortillas and a gluten-free taco seasoning mix.
