This Taco Bell Enchirito copycat recipe combines seasoned ground beef, creamy refried beans, and savory enchilada sauce rolled in soft flour tortillas, topped with melted cheddar cheese and sliced black olives. It’s a comforting and flavorful meal that can be easily prepared on the stovetop and finished in the microwave, perfect for a quick and satisfying Mexican-inspired dish.

  • Total Time: 25 minutes
  • Yield: 8 Enchiritos

Ingredients

Meat and Seasoning

  • 1 pound ground beef
  • 1 ounce packet taco seasoning
  • ¾ cup water

Fillings and Toppings

  • 1 cup refried beans
  • 28 ounce can enchilada sauce
  • 8 soft taco size flour tortillas
  • ½ cup diced onion (divided use)
  • 2 cups shredded cheddar cheese (divided use)
  • Sliced black olives (to serve)

Instructions

  1. Cook the ground beef: Place 1 pound ground beef in a hot skillet over medium-high heat and cook, breaking it up into crumbles until no pink remains, about 8-10 minutes. Drain excess grease.
  2. Season the beef: Add the taco seasoning packet and ¾ cup water to the cooked beef. Stir well to combine, reduce heat to low, and simmer until thickened, approximately 3-4 minutes. Remove from heat and set aside.
  3. Warm refried beans: Heat 1 cup of refried beans in a microwave-safe bowl until warmed through.
  4. Warm enchilada sauce: Heat the 28-ounce can of enchilada sauce in a saucepan on the stovetop over low heat or in the microwave until hot.
  5. Assemble the Enchiritos: Place one soft taco-sized flour tortilla on a microwave-safe plate. Spread 1/8th of the warmed refried beans down the center of the tortilla.
  6. Add meat and onions: Top the beans with 1/8th of the seasoned taco meat mixture followed by some diced onion.
  7. Roll the tortilla: Carefully roll the tortilla up like a burrito, ensuring the seam is on the bottom to prevent unrolling.
  8. Add sauce and cheese: Generously spoon enchilada sauce over the rolled tortilla, then sprinkle with 1/8th of the shredded cheddar cheese.
  9. Heat to melt cheese: Microwave the assembled Enchirito until the cheese on top is melted and bubbly.
  10. Garnish and serve: Top with sliced black olives and serve immediately. Repeat the process with the remaining ingredients to make all 8 Enchiritos.
