  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 2 large boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 1-2 tablespoons olive oil

Sauce

  • ¾ cup chicken broth
  • ½ cup balsamic vinegar
  • ½ chicken bouillon cube
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ teaspoon onion powder

Other Ingredients

  • ½ cup dry white wine
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 2-3 peaches, sliced
  • 8 oz. Burrata cheese (2 balls)
  • ¾ cup honey glazed almonds or pecans

Instructions

  1. Prep Work: Combine all sauce ingredients in a bowl and set aside. Measure and prepare all other ingredients before starting the cooking process. Remove the Burrata cheese from the refrigerator and let it come to room temperature for about 30 minutes to enhance flavor and texture.
  2. Prepare the Chicken: Slice each chicken breast lengthwise to create 2-3 thinner pieces. Lay them between sheets of plastic wrap and gently pound with a meat mallet to about ½-inch thickness. Pat the chicken dry with paper towels. Season both sides of each piece with salt, pepper, and Italian seasoning.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken slices in batches, cooking 4 minutes on each side until a golden crust forms. Remove the chicken from the skillet and set aside.
  4. Deglaze and Cook Garlic: Turn off the heat and pour in the dry white wine, using a silicone spatula to scrape up browned bits from the skillet’s bottom and sides. Return the pan to medium heat and add the minced garlic. Let it cook gently until it reduces by half, about 4 minutes.
  5. Add Butter and Sauce Mixture: Stir in the butter and let it melt completely. Pour in the prepared sauce mixture, bring it to a boil, and cook until the sauce thickens.
  6. Simmer Peaches: Lower the heat to medium-low and add the sliced peaches. Let them soften in the sauce for 4 minutes, allowing the flavors to meld.
  7. Finish Cooking Chicken: Return the seared chicken to the skillet, spooning sauce over the pieces. Simmer everything together until the chicken is heated through, about 2 minutes.
  8. Serve: Plate the chicken and peaches, topping with generous spoonfuls of the balsamic sauce. Add a ball of room-temperature Burrata cheese to each plate and sprinkle with honey-glazed almonds or pecans for a crunchy finish. Serve immediately and enjoy!

Notes

  • The dry white wine used for deglazing can be substituted with additional chicken broth or apple cider vinegar for a non-alcoholic version.
  • If Burrata cheese is unavailable, fresh mozzarella can be used as a substitute, though Burrata’s creamy texture adds a special touch.
  • Honey-glazed pecans can replace almonds depending on your preference or allergy considerations.
  • Be sure not to overcook the chicken when searing to keep it moist and tender.
  • Allowing the cheese to come to room temperature enhances its creamy texture and flavor.
