This Swedish Sandwich Cake is a visually stunning and delicious layered loaf of sourdough bread filled with flavorful sardine rillettes and tarragon egg salad, then frosted with a creamy horseradish and cream cheese mixture. Perfect for special occasions, it combines savory fillings with a smooth, decorative frosting and fresh herb garnishes, creating a delightful savory centerpiece.

  • Total Time: 3 hours 30 minutes (including chilling time)
  • Yield: 8-10 servings

Ingredients

Savoury Frosting

  • 1 package softened cream cheese (250 g)
  • 1/4 cup horseradish (adjust more or less to taste)
  • 1/2 cup whipping cream
  • Salt to taste

Sandwich Cake

  • 1 loaf sourdough bread

Fillings

  • Sardine Rillettes (quantity to cover one bread layer)
  • Tarragon Egg Salad (enough to cover one bread layer)

Decoration

  • Vegetables and cooked eggs for decorating as desired
  • Fresh herbs for garnish

Instructions

  1. Make Savoury Frosting: In a small bowl, whip 1/4 cup whipping cream with a mixer until soft peaks form. In a medium bowl, mix softened cream cheese with 1/4 cup horseradish (reduce to 2 tablespoons if horseradish is strong) and the remaining whipping cream until soft and fluffy. Carefully fold in the whipped cream without deflating it. Add salt to taste, then refrigerate the frosting.
  2. Prepare Bread Layers: Cut off all crusts from the loaf of sourdough bread, preserving the shape of the loaf—make it as round or as straight-edged as possible based on the original shape. Slice the loaf horizontally into three even layers.
  3. Assemble the Sandwich Cake: Place the first bread layer on a serving platter. Optionally, place parchment paper underneath the bread to catch any frosting drips. Spread a generous layer of sardine rillettes over the bread, then cover with the second bread layer. Spread the tarragon egg salad over this layer and place the final bread layer on top. Optionally refrigerate for 30-60 minutes to help it firm up.
  4. Frost the Cake: Using a cake spatula, spread the savoury frosting evenly over the top and sides of the sandwich loaf. For best results, first apply a thin crumb layer of frosting and chill for one to two hours before applying the main, thicker layer of frosting. Remove the parchment paper if used.
  5. Decorate: Garnish the frosted cake with fresh herbs, sliced vegetables, and cooked eggs according to preference. Refrigerate the finished cake for 2-3 hours or overnight to allow flavors to meld and the cake to firm up before serving.

Notes

  • The horseradish quantity in the frosting can be adjusted according to desired heat intensity.
  • Preserving the loaf shape while removing crusts helps maintain an attractive cake appearance.
  • Using parchment paper under the bread layers helps keep the serving platter clean during frosting.
  • The frosting can be made a day ahead and stored refrigerated for up to a week if kept in an airtight container.
  • Refrigeration time allows fillings to set and makes slicing the sandwich cake neater.
  • The decorated sandwich cake makes an impressive centerpiece for parties or special gatherings.
