Ingredients
Roasted Pretzels
- 2 heaping cups pretzels (regular or gluten free)
- 6 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
Strawberry Pretzel Marshmallow Treats
- 1/2 cup (112g) unsalted butter + more for coating pan
- 1 10oz bag mini marshmallows + 1 additional cup (optional)
- 1/2 tsp vanilla extract
- 1/4 tsp kosher salt
- 2 1/2 cups (75g) crispy rice cereal (gluten free if needed)
- 3/4 cup (18g) freeze dried strawberries, roughly crushed
- Roasted pretzels (prepared as above)
Instructions
- Prepare Roasted Pretzels: Preheat the oven to 400°F and line a large baking sheet with parchment paper. Place pretzels in a ziplock bag and crush them using a rolling pin or a blunt object. Transfer the crushed pretzels to a bowl, mix with melted butter and granulated sugar until evenly coated. Spread the mixture evenly on the prepared baking sheet and bake for 8-10 minutes until deep golden brown. Immediately after baking, toss the pretzels on the baking sheet to keep them evenly coated and allow them to crisp up as they cool.
- Butter Baking Pan: Generously butter the inside of an 8×8 inch baking pan to prevent sticking, then set it aside.
- Mix Dry Ingredients: In a large bowl, combine the crispy rice cereal, freeze dried strawberries, roasted pretzels, and the additional 1 cup of mini marshmallows if using. Stir to distribute evenly.
- Melt Butter and Marshmallows: In a large pot over medium heat, melt 1/2 cup (112g) of unsalted butter together with the 10oz bag of mini marshmallows. Stir continuously until the mixture is fully melted and smooth.
- Add Flavorings: Remove the pot from heat and stir in the vanilla extract and kosher salt until incorporated.
- Combine Mixtures: Pour the marshmallow mixture over the dry ingredients in the large bowl. Gently fold everything together until the cereal, pretzels, and strawberries are fully coated with the marshmallow mixture, being careful not to crush the freeze dried strawberries excessively.
- Press into Pan: Scoop the combined mixture into the buttered baking pan. Using your hands sprayed with nonstick spray or a spatula, firmly press and smooth the mixture evenly into the pan for compact treats.
- Cool and Slice: Allow the treats to cool at room temperature for about one hour until set. Once cooled and firm, slice into squares and serve.
Notes
- For extra marshmallow gooeyness, add the optional extra 1 cup mini marshmallows.
- Use gluten free pretzels and crispy rice cereal to make the treats gluten free.
- Freeze dried strawberries add vibrant flavor without adding moisture; crushing them lightly helps distribute flavor evenly.
- Butter or nonstick spray the pan well to prevent sticking and help removal.
- Be gentle folding the marshmallow mix to preserve the texture of the freeze dried strawberries.
- These treats can be stored in an airtight container at room temperature for up to 3 days.
