A light and airy dessert featuring layers of chilled angel food cake filled and topped with a luscious strawberry and Cool Whip mixture, finished with a delightful coating of miniature marshmallows. This no-bake, refreshing cake is perfect for spring and summer gatherings.

  • Total Time: 2 hours 15 minutes
  • Yield: 8 servings

Ingredients

Strawberry Mixture

  • 1 lb fresh strawberries (washed, dried, hulled and diced)
  • 1 tablespoon granulated sugar (optional)
  • 16 oz Cool Whip, thawed in fridge

Cake

  • Store-bought Angel Food Cake, chilled

Topping

  • 2 cups miniature marshmallows

Instructions

  1. Prepare the Strawberries: In a large mixing bowl, combine the diced strawberries and granulated sugar. Let the mixture rest for 10 minutes to allow the juices to develop, then lightly mash the strawberries to release more flavor. Alternatively, mash the strawberries without sugar if preferred.
  2. Mix in Cool Whip: Gently fold the thawed Cool Whip into the mashed strawberry mixture until fully incorporated. Set this filling aside for assembling the cake.
  3. Slice the Cake: Remove the angel food cake from its packaging and invert it onto a serving platter. Using a serrated knife, carefully slice the cake horizontally into three even layers.
  4. Layer the Cake and Filling: Place the bottom layer of cake on the platter and spread a generous layer of the strawberry-Cool Whip mixture over it. Add the middle cake layer on top, then spread another layer of the strawberry mixture. Finally, place the remaining top cake layer over the second layer of filling.
  5. Apply Marshmallow Coating: Fold the miniature marshmallows into the remaining strawberry mixture in the bowl. Evenly spread this mixture over the outer edges and top of the assembled cake until it is fully covered with marshmallows.
  6. Chill and Serve: Refrigerate the cake for at least 2 hours to allow the marshmallows to soak up the strawberry juices and soften. When ready, slice the cake and serve chilled for a refreshing dessert.
