Delicious and healthy strawberry crumb bars featuring a buttery almond flour crust and crumble topping with a gooey, naturally sweetened strawberry filling. These paleo, gluten free, dairy free, and egg free bars are perfect for a wholesome dessert or snack.

  • Total Time: 1 hour 10 minutes
  • Yield: 16 bars

Ingredients

Filling

  • 3 cups chopped frozen strawberries (about 12 oz)
  • 2 Tbsp maple syrup
  • 2 Tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 ½ Tbsp tapioca starch

Crust and Crumble

  • 2 ¼ cups blanched almond flour (205g)
  • ¾ cup tapioca starch (90g)
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup palm shortening (93g) or butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C). Line an 8×8 inch or 11×7 inch baking dish with parchment paper and set aside to prevent sticking.
  2. Make the Filling: Combine the chopped frozen strawberries, maple syrup, fresh lemon juice, lemon zest, and tapioca starch in a small saucepan. Cook over medium heat for 20 minutes, stirring frequently and scraping down the sides to avoid burning, until the mixture thickens and becomes a gooey filling.
  3. Prepare Crust and Crumble Dough: While the filling cooks, mix almond flour, tapioca starch, baking powder, and salt in a large bowl. Add palm shortening (or butter), maple syrup, and vanilla extract. Stir with a spatula or fork, then use your hands to bring the dough together evenly.
  4. Assemble Bars: Press half of the dough evenly into the lined baking pan to create the crust layer. Pour the warm strawberry filling evenly over the crust. Crumble the remaining dough over the filling and gently press it down so part of the crumble sinks into the fruit layer.
  5. Bake: Place the assembled bars in the preheated oven and bake for 35 minutes, until the topping is lightly browned and set.
  6. Cool and Serve: Allow the bars to cool to room temperature in the pan. For best cutting results, refrigerate overnight before slicing. Serve warm or chilled.
  7. Storage: Keep bars in an airtight container in the refrigerator for up to 5 days.

Notes

  • These bars cut best if chilled in the fridge overnight to set properly.
  • You can substitute palm shortening with butter if not strictly paleo.
  • Use parchment paper to make removal from the pan easier.
