These Spinach & Ground Turkey Breakfast Sausages are a healthy, flavorful alternative to traditional breakfast sausages. Made with lean ground turkey and nutrient-rich spinach, they are seasoned with a blend of herbs and spices for a savory morning meal. Perfectly pan-fried to a juicy, golden-brown finish, these patties offer a delicious protein-packed start to your day.

  • Total Time: 22 minutes
  • Yield: 6 patties

Ingredients

Main Ingredients

  • 1 cup frozen spinach (about 4 ounces), defrosted and squeezed dry
  • 1 pound ground turkey (93% lean)
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon ground black pepper
  • ½ teaspoon kosher salt
  • ½ teaspoon onion powder

For Cooking

  • 1 Tablespoon olive oil

Instructions

  1. Mix Ingredients: In a large bowl, combine all ingredients except the olive oil. Use clean hands or a spoon to mix everything thoroughly until the seasonings and spinach are evenly distributed throughout the ground turkey.
  2. Form Patties: Divide the mixture into 6 equal portions. Shape each portion into patties roughly ¼ inch thick to ensure even cooking.
  3. Heat Skillet: Place a large skillet over medium heat and add the olive oil. Allow the oil to become hot before adding the patties to prevent sticking and promote browning.
  4. Cook Patties: Add the patties to the skillet without overcrowding them. Cook each side for 3-4 minutes until browned and an internal temperature of 165°F (74°C) is reached for food safety.
  5. Serve or Store: Enjoy the patties warm immediately or cool completely before storing them in an airtight container in the refrigerator for up to 5 days.

Notes

  • To best remove excess water from the defrosted spinach, allow it to defrost overnight in the refrigerator or use the microwave to defrost faster.
  • Drain the spinach well by pressing it in a mesh strainer with the back of a spoon or squeezing it tightly in a clean kitchen towel over the sink to avoid soggy patties.
  • Make sure patties are cooked to an internal temperature of 165°F to ensure safety.
