Ingredients
Main Ingredients
- 1 lb ground beef (96% lean)
- 10 eggs
- 3 medium bell peppers, diced (green, red, and orange)
- 1 4 oz can diced green chilis
- 1/2 cup chopped white onion
- 2 tbs unsweetened nut milk (or full fat canned coconut milk for creaminess)
- 2 tbs taco seasoning (such as Primal Palate)
- 1 tbsp avocado oil (Primal Kitchen Foods recommended)
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt & pepper to taste
- Avocado for garnish
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to ensure it’s at the right temperature when the frittata is ready to bake.
- Whisk Eggs: In a mixing bowl, crack 10 eggs and add 1 tsp onion powder, 1 tsp garlic powder, 2 tbs unsweetened nut milk, and salt and pepper to taste. Whisk until fully combined and smooth.
- Sauté Vegetables: Heat 1 tbsp avocado oil in a cast iron skillet over medium heat. Add 1/2 cup chopped white onion and the diced bell peppers. Sauté for about 3-4 minutes until the vegetables begin to soften.
- Cook Ground Beef: Add 1 lb ground beef and 2 tbs taco seasoning to the skillet with vegetables. Cook until the beef is no longer pink, breaking it into crumbles as it cooks. This should take about 5-7 minutes. Remove skillet from heat.
- Add Green Chilis: Stir in the 4 oz can of diced green chilis into the beef and vegetable mixture.
- Prepare for Baking: Spray the sides of the cast iron skillet with avocado oil spray to prevent sticking. Pour the whisked eggs evenly over the meat and vegetables in the skillet, using a fork to distribute the eggs throughout.
- Bake: Place the skillet in the preheated oven and bake for 14-17 minutes, or until eggs are set. Check doneness by inserting a fork – if it comes out clean, the frittata is ready. The surface may still look slightly moist but should not be runny.
- Serve: Slice the frittata into 6 or 8 servings. Garnish with avocado slices and jalapeño if desired, and serve warm.
Notes
- Nutrition info provided is calculated based on 6 servings.
- You can substitute unsweetened nut milk with full fat canned coconut milk for a creamier texture.
- Use 96% lean ground beef for a leaner option; regular ground beef can be used but will increase fat content.
- For a spicier kick, add jalapeño slices either in the mixture or as garnish.
- Cast iron skillet is ideal for even cooking; if unavailable, an oven-safe skillet or baking dish can be used.
