These sourdough cosmic brownies are a delicious homemade twist on the classic treat, combining a rich, fudgy chocolate base with the subtle tang of sourdough. Topped with a glossy chocolate ganache and crunchy mini M&Ms, they offer a perfect balance of intense chocolate flavor and playful texture.

  • Total Time: 2 hours 50 minutes
  • Yield: 16 brownies (9" x 9" pan, approx. 4x4 squares)

Ingredients

Sourdough Brownies – Dry Ingredients

  • 150 g All Purpose Flour
  • 380 g White Sugar
  • 65 g Cocoa Powder
  • 3 g Salt
  • 3 g Baking Powder
  • 125 g Semi Sweet Chocolate Chips

Sourdough Brownies – Wet Ingredients

  • 130 g Butter, melted
  • 2 Large Eggs (70 g each)
  • 5 g Vanilla Extract
  • 120 g Sourdough Starter (active or unfed)

Chocolate Ganache Topping

  • 130 g Heavy Whipping Cream
  • 250 g Semi Sweet Chocolate Chips
  • 100 g Mini M&Ms (or candy coated chocolate chips)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 160°C (320°F). Grease a 9″ x 9″ brownie pan with butter or line it with parchment paper, depending on your preference.
  2. Mix Dry Ingredients: In a bowl, whisk together all purpose flour, white sugar, cocoa powder, salt, and baking powder until well combined. Add the semi sweet chocolate chips and mix so they are coated with the flour mixture.
  3. Combine Wet Ingredients: In a separate bowl, whisk the melted butter, 2 large eggs, vanilla extract, and sourdough starter until fully combined.
  4. Mix Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredient bowl. Gently fold the mixture together with a spatula until just combined. The batter will be thick, which is expected for fudgy brownies.
  5. Transfer and Bake: Spread the brownie batter evenly in the prepared pan, pushing it out to the edges as needed. Bake at 160°C (320°F) for 35 minutes. Check doneness by inserting a toothpick; it should come out with moist crumbs but the top should be set and crackly.
  6. Cool the Brownies: Remove the pan from the oven and allow the brownies to cool for about an hour before adding the ganache.
  7. Prepare Ganache: In a microwave-safe jug, microwave heavy whipping cream and semi sweet chocolate chips for about 1 minute and 30 seconds. Remove carefully and whisk until smooth and glossy.
  8. Top and Chill: Pour the ganache evenly over the cooled brownies. Sprinkle mini M&Ms or candy-coated chocolate chips on top. Refrigerate for 2 hours to set before slicing and serving.

Notes

  • You can use either active sourdough starter or sourdough discard; avoid using a starter that is too thick to prevent streaks.
  • These brownies taste best the day after baking when the flavors deepen and texture becomes more fudgy.
