Ingredients
Chocolate Chip Cookie Layer
- 3/4 cup unsalted butter (168 grams), softened
- 1/2 cup brown sugar (105 grams)
- 1/2 cup white sugar (100 grams)
- 1 large egg
- 1 large egg yolk (discard the white)
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour (188 grams)
- 1/4 teaspoon salt
- 2/3 cup chocolate chips (120 grams)
Oreo Layer
- 28 Oreo cookies
Brownie Layer
- 1/2 cup unsalted butter (112 grams), cubed
- 6 oz dark chocolate (170 grams), 50-70% or semi-sweet
- 1 cup granulated sugar (200 grams)
- 2 large eggs
- 1/2 cup all-purpose flour (63 grams)
- 1/4 cup cocoa powder (23 grams)
- 1/2 teaspoon salt
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (180°C). Lightly grease a 9×13 inch (23×33 cm) baking pan, line it with parchment paper leaving an overhang for easy removal, and grease the parchment paper to help it stick.
- Chocolate Chip Cookie Layer: In a large bowl, beat together softened butter, brown sugar, and white sugar until combined. Beat in the egg, the additional egg yolk (discard the leftover white), and vanilla extract. On low speed, incorporate the flour and salt. Turn off the mixer and fold in chocolate chips using a spatula. Spread the cookie dough evenly into the prepared pan.
- Oreo Layer: Arrange the Oreo cookies evenly over the cookie dough layer, pressing them lightly to adhere. Use approximately 7 rows of 4 cookies each, adding half cookies as needed to fully cover the layer.
- Prepare Brownie Batter: Finely chop the chocolate. In a heatproof bowl, combine chocolate and cubed butter. Microwave on medium power in 45-second intervals, stirring between each, until melted and smooth. Let cool for about 5 minutes. Whisk in the eggs and granulated sugar until well combined.
- Combine Dry Ingredients: Sift together the flour, cocoa powder, and salt to remove lumps, then gently whisk them into the chocolate mixture until just combined.
- Assemble and Spread Brownie Layer: Spoon the brownie batter over the Oreo layer in dollops across the pan, then carefully spread it smoothly using a spatula to cover the Oreos completely.
- Bake: Place the pan in the preheated oven and bake for 37-45 minutes. Check doneness by inserting a toothpick; it should come out dry or with a few moist crumbs based on your preferred gooeyness.
- Cool and Serve: Allow the brownies to cool completely (at least 4 hours) in the pan. Use the parchment paper overhang to lift the brownies out onto a cutting board, slice into 18 pieces, and serve.
- Storage: Store any leftovers at room temperature in an airtight container for up to 4 days.
Notes
- Pan Sizes: The recipe can be halved for an 8×8 inch (20×20 cm) pan with a reduced bake time of 32-37 minutes. When halving, use only 1 whole egg for the cookie dough—there isn’t enough batter for a 9×9 inch pan.
- Chocolate Chips: Avoid adding extra chocolate chips as it may hinder slicing the brownies cleanly.
- Dark Chocolate: Use dark chocolate with 50-70% cocoa content or semi-sweet for balanced richness; avoid higher percentages for best flavor and texture.
- Nutrition Estimates: Nutrition facts are approximate and based on dividing the recipe into 18 equal brownies.
- Storage: Keep brownies in an airtight container at room temperature; they remain fresh up to 4 days.
