Ingredients
Chicken
- 1.5 to 2 lbs (700–900g) boneless, skinless chicken thighs or breasts
Sauce
- 1 cup unsweetened natural peanut butter (creamy)
- ½ cup low-sodium soy sauce
- ¼ cup honey or brown sugar
- 2–3 tbsp rice vinegar or lime juice
- 1 tbsp sesame oil (optional but adds flavor)
- 1 tbsp freshly grated ginger
- 3 garlic cloves, minced
- 1–2 tsp red chili flakes or Sriracha (adjust to heat preference)
- 1 cup canned coconut milk (optional for creaminess)
- ½ cup water or chicken broth (to loosen sauce)
Garnish
- Crushed peanuts
- Chopped cilantro
- Green onions
- Sesame seeds
Instructions
- Mix the Sauce: In a bowl, whisk together the peanut butter, low-sodium soy sauce, honey or brown sugar, rice vinegar or lime juice, sesame oil, minced garlic, freshly grated ginger, red chili flakes or Sriracha, and water or chicken broth. If using coconut milk for extra creaminess, add it into the mixture and combine well.
- Add Chicken to Slow Cooker: Place the boneless, skinless chicken thighs or breasts evenly at the bottom of your slow cooker. Pour the prepared peanut sauce over the chicken, ensuring each piece is well coated with the flavorful sauce.
- Cook: Cover and cook on Low for 5 to 6 hours, or on High for 2.5 to 3.5 hours. The chicken should become very tender and easily shred with a fork when done.
- Shred & Stir: Using two forks, shred the chicken directly inside the slow cooker. Stir the shredded chicken well to coat it evenly with the sauce for maximum flavor infusion.
- Garnish & Serve: Garnish with crushed peanuts, chopped cilantro, sliced green onions, and sesame seeds before serving. Pair this dish with your choice of sides like steamed jasmine rice, rice noodles, or a refreshing Asian-style slaw for a satisfying meal.
Notes
- You can substitute chicken breasts with thighs for more tender and juicy results.
- Adjust chili flakes or Sriracha to your preferred level of spice.
- Using low-sodium soy sauce helps control the saltiness of the dish.
- Coconut milk is optional but adds a lovely creamy texture and richness.
- If you prefer a thicker sauce, once cooked, you can simmer the sauce on the stovetop to reduce it.
- Leftovers store well in the refrigerator for up to 3 days and freeze well for up to 2 months.
- Serve with sides like steamed rice, noodles, or fresh salads to complete the meal.
