A simple and flavorful Mediterranean appetizer featuring roasted artichoke hearts seasoned with oregano, paprika, and topped with feta, sun-dried tomatoes, and Parmesan cheese. Served with a creamy feta dip, this dish offers a perfect balance of salty, tangy, and savory flavors, ideal for entertaining or a light snack.

  • Total Time: 37 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 2 (13.75 oz.) cans whole artichoke hearts, drained
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Toppings

  • 2 oz. feta cheese, crumbled
  • 1/2 cup diced sun dried tomatoes
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons capers
  • Red pepper flakes, for garnish (optional)

For Serving

  • Whipped Feta Dip

Instructions

  1. Preheat Oven: Heat your oven to 425°F (220°C) to get it ready for roasting the artichokes.
  2. Prepare Artichokes: Place the drained artichoke hearts cut side up on a baking sheet. Drizzle with olive oil and gently toss to ensure they are evenly coated. Sprinkle half of the dried oregano and paprika on top, followed by a couple of pinches of kosher salt and fresh cracked pepper.
  3. Season Opposite Side: Flip the artichoke hearts over so the cut side is down. Sprinkle the remaining oregano and paprika along with another couple pinches of salt and pepper to season the other side.
  4. Roast Artichokes: Roast the artichokes cut side down for 15 minutes to develop a nice roasted flavor and slight crisp.
  5. Flip and Continue Roasting: Flip the artichoke hearts so they are cut side up again, then roast for an additional 10 minutes.
  6. Broil for Color: Broil the artichokes for 1-2 minutes to add a lovely golden finish.
  7. Add Toppings: Sprinkle the roasted artichokes with crumbled feta cheese, diced sun dried tomatoes, and grated Parmesan cheese evenly over the top.
  8. Final Broil: Broil for another minute or so until the cheese begins to melt and slightly brown.
  9. Garnish and Serve: Remove from the oven, garnish with fresh chopped parsley, capers, and optional red pepper flakes. Serve warm with a side of creamy feta dip for a delicious Mediterranean appetizer.

Notes

  • Don’t skip the Creamy Feta Dip—it perfectly complements the salty and herby roasted artichokes and is worth the extra effort.
  • These artichokes can be served warm or at room temperature, making them perfect for parties where guests can enjoy them all night.
  • Save time cleaning by lining your baking sheet with parchment paper or aluminum foil.
  • For an extra bright, acidic flavor, squeeze fresh lemon juice or add lemon zest to the seasoning before roasting.
  • If you desire garlic flavor, add garlic powder or minced garlic to the artichokes before roasting, mimicking traditional garlic butter preparations used with fresh artichokes.
