A creamy, comforting scalloped corn casserole featuring a blend of cream-style and whole kernel corn, bound with eggs and topped with a buttery, seasoned Ritz cracker crust. Perfect as a classic Southern side dish for holiday dinners or family meals.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 2 cans (15 ounces each) cream-style corn
  • 1 can (15 ounces) whole kernel sweet corn, drained
  • 3 large eggs, beaten
  • 1 ½ cups (78 g) crushed Ritz crackers, divided
  • ½ cup (1 stick / 113 g) unsalted butter, melted, divided
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • parsley, chopped for garnish

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 350° F. Lightly spray a 9×9-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Mix Corn Mixture: In a large mixing bowl, combine the cream-style corn, drained whole kernel corn, beaten eggs, ¾ cup of crushed Ritz crackers, and half of the melted butter. Stir thoroughly until the mixture is evenly combined.
  3. Pour Into Baking Dish: Transfer the corn mixture into the prepared baking dish and spread it out evenly to ensure uniform baking.
  4. Prepare Topping: In a small bowl, mix the remaining ¾ cup crushed Ritz crackers with the remaining melted butter, paprika, kosher salt, and ground black pepper. Stir well until the cracker crumbs are evenly coated with the butter and seasonings.
  5. Top the Casserole: Evenly sprinkle the buttered cracker topping over the corn mixture in the baking dish, covering the surface completely.
  6. Bake: Bake in the preheated oven for 30 to 40 minutes, or until the topping is golden brown and the casserole is bubbling around the edges, indicating it is cooked through.
  7. Rest and Garnish: Remove the casserole from the oven and let it rest for 5 to 10 minutes to set. Garnish with chopped parsley before serving.

Notes

  • For extra flavor, add a pinch of cayenne pepper or smoked paprika to the cracker topping.
  • You can substitute crushed saltine crackers if you don’t have Ritz crackers, but the flavor and texture will differ slightly.
  • Make sure to drain the whole kernel corn well to avoid excess liquid in the casserole.
  • This dish can be prepared a day ahead and refrigerated; bake just before serving for warm, fresh casserole.
