Samoa Truffles are a delightful no-bake treat inspired by the classic Samoa cookie flavors. These truffles combine a creamy shortbread and cream cheese dough, toasted coconut, and a luscious caramel coating, finished with a rich chocolate drizzle. Perfect for satisfying your sweet tooth with a bite-sized indulgence that captures the essence of the beloved cookie in an easy-to-make truffle form.

  • Total Time: 30 minutes plus chilling time
  • Yield: Approximately 20-24 truffles

Ingredients

Shortbread Dough

  • 1 11.2oz box of Keebler Shortbread Sandies (or any shortbread cookies, enough to yield 2 cups of crumbs)
  • 6 oz cream cheese (about 3/4 of a block), softened to room temperature

Caramel Coating

  • 30 caramels or caramel bits (found near chocolate chips)
  • 1/4 cup heavy cream
  • 2 cups coconut flakes*

Chocolate Drizzle

  • 4 oz milk or dark chocolate, whichever you prefer

Instructions

  1. Prepare Shortbread Dough: Using a food processor or a rolling pin and a ziplock bag, crush the shortbread cookies into fine crumbs. Add the softened cream cheese and mix until the mixture forms a smooth, pliable dough. If using a bag, knead the dough by hand to combine thoroughly.
  2. Shape and Freeze: Roll 2-3 tablespoons of the dough into small balls. Place the balls on a parchment-lined baking sheet and freeze until solid; this helps them hold together during the caramel coating process.
  3. Toast Coconut Flakes: In a medium skillet over medium heat, toast the coconut flakes, stirring frequently until some flakes turn golden brown. Be careful to avoid burning. Set aside once toasted.
  4. Make Caramel Mixture: In a saucepan over medium heat, warm the heavy cream. Add the caramels and stir continuously until completely melted and smooth. Mix in the toasted coconut flakes to combine evenly.
  5. Coat Truffles: Using a spoon, roll each frozen shortbread ball in the warm caramel-coconut mixture until fully coated. Place the coated balls back onto the parchment-lined baking sheet. If the caramel becomes too thick for coating, add a splash of heavy cream to thin it out.
  6. Add Chocolate Drizzle: Melt the chocolate in the microwave in 15-second increments, stirring after each interval until smooth and glossy. Drizzle the melted chocolate over the coated truffles evenly.
  7. Chill and Serve: Place the finished truffles in the refrigerator to chill and set the chocolate. Keep chilled until ready to serve. Enjoy your Samoa Truffles!

Notes

  • To crush cookies without a food processor, use a rolling pin to press inside a sealed ziplock bag for best results.
  • Toasting coconut flakes enhances their flavor but watch carefully as they can burn quickly.
  • If the caramel cools and thickens too much for coating, gently rewarm it and add a little heavy cream to loosen.
  • You can substitute caramel bits with individually wrapped caramels for convenience.
  • Choose milk or dark chocolate based on your preference for the drizzle.
