Raspberry Cheesecake Overnight Oats combine creamy cottage cheese and fresh raspberries with hearty rolled oats and chia seeds for a delicious and nutritious make-ahead breakfast. This no-cook recipe blends the richness of cheesecake flavors with the convenience of overnight oats, perfect for busy mornings or a healthy snack.

  • Total Time: 2 hours 10 minutes (including chilling time)
  • Yield: 1 serving

Ingredients

Base Ingredients

  • ½ cup cottage cheese (4% fat recommended)
  • 3 tablespoons milk (dairy or dairy-free)
  • 2 tablespoons maple syrup
  • ⅓ cup rolled oats
  • 1 tablespoon chia seeds

Fruit Topping

  • ½ cup raspberries (fresh or frozen)

Instructions

  1. Blend cottage cheese mixture: In a blender or food processor, combine the cottage cheese, milk, and maple syrup. Blend until the cottage cheese is smooth and the mixture is well combined.
  2. Combine oats and chia seeds: In a 16-ounce container, add the rolled oats and chia seeds. Stir them together to evenly distribute the chia seeds.
  3. Add blended mixture to oats: Pour the blended cottage cheese mixture over the oats and chia seeds. Stir thoroughly until all ingredients are fully incorporated.
  4. Prepare raspberries: If using frozen raspberries, defrost them. Mash the raspberries gently with a fork to release their juices.
  5. Mix raspberries into oats: Add half of the mashed raspberries to the oat mixture and stir them in to disperse the flavor evenly.
  6. Top with remaining raspberries: Place the remaining whole raspberries on top of the oats mixture for garnish and extra burst of flavor.
  7. Chill and serve: Enjoy the oats immediately for a fresh taste, or store the container in the refrigerator for at least 2 hours or overnight to allow the oats and chia seeds to soften and flavors to meld.

Notes

  • You may need to add extra milk or water to adjust the consistency based on your preference for thicker or thinner oats.
  • Higher fat cottage cheese tends to be less tart; if using fat-free cottage cheese, consider adding a little more sweetener to balance flavor.
  • This recipe can be prepared up to 3 days in advance and stored in an airtight container in the fridge for convenience.
  • If fresh or frozen raspberries are unavailable, raspberry preserves can be used as an alternative for flavor.
