These Potato Cheddar Chive Bakes are a delicious Starbucks copycat recipe featuring roasted red potatoes and onions baked with a smooth blend of eggs, cottage cheese, and sharp cheddar. Perfect for a hearty breakfast or brunch, they are flavored with smoked paprika and fresh chives, offering a warm and savory start to your day.

  • Total Time: 45 minutes
  • Yield: 12 servings

Ingredients

Roasted Potatoes

  • 1 lb red potatoes – diced into 1/2″ pieces
  • 1/2 a yellow onion – large dice
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/8 tsp smoked paprika

Egg Mixture

  • 4 large eggs
  • 1 cup cottage cheese
  • 1 tsp onion powder
  • Pinch of salt (to blend with eggs)

Topping

  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp finely diced chives

Instructions

  1. Preheat and Roast Potatoes: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Spread the diced potatoes and onions on the sheet, then toss with olive oil, kosher salt, and smoked paprika. Roast in the oven for 15 minutes until the potatoes start to soften and the onions become fragrant.
  2. Prepare Muffin Pan and Egg Blend: While the potatoes are roasting, spray a 12-slot muffin pan with oil to prevent sticking. In a high-speed blender, combine the eggs, cottage cheese, onion powder, and a pinch of salt, blending until the mixture is completely smooth and creamy.
  3. Combine Potatoes and Egg Mixture: After the initial roasting, reduce the oven temperature to 350°F (175°C). Evenly divide the roasted potatoes and onions among the muffin slots. Pour the blended egg mixture over the potatoes in each slot, then gently stir to combine the eggs and potatoes thoroughly.
  4. Add Toppings and Bake: Sprinkle shredded sharp cheddar cheese and finely diced chives evenly on top of each muffin slot. Bake the assembled bakes at 350°F for 18 to 20 minutes or until the egg mixture is set and cooked through.
  5. Broil for Cheese Browning: Switch the oven to broil and broil the bakes for 1 to 2 minutes to brown and slightly crisp the cheese topping, watching carefully to prevent burning.
  6. Cool and Serve: Remove from the oven and let the bakes cool slightly before serving to allow them to firm up and enhance flavors.

Notes
