A light and creamy pistachio frosting made with pure pistachio paste and mascarpone cheese. This versatile frosting is perfect for topping cupcakes, filling cakes, or adding a delightful nutty twist to your favorite desserts. Its smooth texture and subtle pistachio flavor make it an elegant choice for any celebration or everyday treat.

  • Total Time: 15 minutes
  • Yield: Enough frosting to frost 12 cupcakes or fill a 6-inch (15 cm) cake

Ingredients

Frosting Ingredients

  • 250 g mascarpone cheese, cold (1 cup)
  • 250 g heavy cream (minimum 30% fat), cold (1 cup)
  • 45 g powdered sugar, sifted (⅓ cup + 1 tbsp)
  • 1 tsp vanilla extract
  • 40 g pure pistachio paste (2 ½ tbsp)
  • Green gel food coloring, optional

Instructions

  1. Chill Equipment: Place your mixing bowl and whisk attachments in the refrigerator for 10 minutes to ensure they are very cold. This helps the cream whip faster and creates a more stable frosting.
  2. Mix Mascarpone Base: Add the cold mascarpone cheese to the chilled bowl. Then add the sifted powdered sugar, vanilla extract, and pistachio paste. Beat on medium speed until the mixture becomes smooth and creamy, with no lumps.
  3. Add and Whip Cream: Pour the cold heavy cream into the bowl gradually while continuing to beat on medium speed. Whip until the mixture thickens and forms stiff peaks on the whisk, indicating a firm and creamy consistency perfect for frosting.
  4. Add Color (Optional): For a brighter pistachio green color, add a tiny drop of green gel food coloring and whisk just a few seconds more to incorporate the color evenly without over-whipping.
  5. Use Immediately: Once the frosting holds stiff peaks and has a smooth texture, it’s ready to be used. Frost 12 cupcakes or fill a 6-inch (15 cm) cake, or decorate any dessert of your choice.

Notes

  • Storage: Keep the frosting in an airtight container in the refrigerator and use within 2 days for best freshness and texture.
  • Use a digital kitchen scale for accuracy when measuring ingredients instead of cups.
  • Ensure mascarpone cheese and heavy cream are very cold to help achieve the perfect whipped consistency.
  • Chilling the mixing bowl and whisk helps whip the cream faster and creates a more stable frosting.
  • Sift powdered sugar to avoid lumps and ensure a smooth frosting texture.
  • Add heavy cream gradually and stop whipping as soon as stiff peaks form to prevent over-whipping or turning the cream into butter.
  • If adding gel food coloring, use only a tiny drop to avoid affecting the frosting’s texture.
