Combining creamy white chocolate with crunchy pistachios and tart dried cranberries, these truffles are perfect for festive occasions or as a delightful homemade gift. With simple ingredients and straightforward steps, anyone can create these beautiful and indulgent bite-sized sweets.

  • Total Time: 3 hours 20 minutes
  • Yield: Approximately 20 truffles

Ingredients

Truffle Mixture

  • 7 oz (200g) good quality white chocolate, cut into small pieces
  • 1/4 cup (60ml) whipping cream (30-35% fat)
  • 1 tbsp (14g) butter
  • 1/4 tsp (1g) salt
  • 1/2 tsp (3g) vanilla extract
  • 1/3 cup (40g) pistachios, chopped
  • 1/3 cup (40g) dried cranberries

Coating

  • 1/2 cup (60g) chopped pistachios, for rolling the truffles

Instructions

  1. Prepare the chocolate and cream: Place the white chocolate and whipping cream into a heatproof bowl.
  2. Melt the white chocolate: Melt the white chocolate with the cream over a bain-marie (double boiler) on low heat, stirring continuously until the chocolate is almost melted.
  3. Add butter: Add the butter to the mixture and stir continuously until the mixture becomes completely smooth.
  4. Remove from heat: Take the bowl off the heat to stop the melting process.
  5. Add flavorings: Stir in the vanilla extract and salt thoroughly.
  6. Fold in nuts and fruit: Gently fold in the chopped pistachios and dried cranberries to distribute evenly.
  7. Chill the mixture: Let the mixture cool slightly, then cover and refrigerate for 2–3 hours or until firm enough to handle. Stir once or twice during chilling for even texture.
  8. Form truffles: Using a teaspoon, scoop small portions of the mixture and roll them into balls with your hands.
  9. Coat truffles: Roll each truffle in the chopped pistachios, ensuring an even coating on all sides.
  10. Serve or store: Serve the truffles immediately or refrigerate them in an airtight container. They keep fresh in the refrigerator for up to 2 weeks.

Notes

  • Use good quality white chocolate for the best flavor and texture.
  • Ensure the cream is at room temperature to melt the chocolate smoothly.
  • If the mixture is too soft to roll, refrigerate longer until firm.
  • You can substitute dried cranberries with other dried fruits like cherries or blueberries.
  • Store truffles in an airtight container in the refrigerator to maintain freshness.
