Ingredients
Potatoes
- 2 russet potatoes
Seasoning and Oil
- 3 tablespoons olive oil
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat and prepare baking sheets. Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper. Light-colored baking sheets are preferable to ensure even baking and prevent burning.
- Slice the potatoes thinly. Using a mandolin slicer, cut the russet potatoes into thin rounds slightly less than ⅛-inch thick. If you do not have a mandolin, carefully use a sharp knife to achieve thin, even slices.
- Rinse and soak potatoes. Rinse the potato slices thoroughly in cold water, agitating them with your hands until the water runs clear to remove excess surface starch, which helps achieve crispiness. Then soak the slices in cold water for 15 to 30 minutes.
- Dry the potatoes. Drain the soaked potato slices and pat them completely dry using kitchen towels. Also dry the bowl used for soaking to prevent added moisture.
- Toss with oil and seasonings. Return the dried potato slices to the dry bowl. Add olive oil, paprika, garlic powder, salt, and black pepper. Toss gently with your hands until the slices are evenly coated.
- Arrange and bake. Lay the potato slices in a single layer on the prepared baking sheets, making sure slices do not touch or overlap. Bake in the preheated oven for 20 to 25 minutes, flipping the slices halfway through the cooking time to ensure even crisping.
- Cool and serve. Once golden and crisp, remove the chips from the oven and let them cool slightly before serving for the best texture and crunch.
Notes
- Using a mandolin ensures uniform thin slices which bake evenly and crisp up well.
- Soaking and rinsing the potato slices removes starch that can otherwise cause sogginess.
- Drying the potatoes thoroughly before baking prevents steaming and promotes crispness.
- If desired, experiment with seasoning variations like cayenne pepper or smoked paprika for different flavor profiles.
- Store leftover chips in an airtight container to maintain crispness.
