Ingredients
For the Crust:
- 25 Oreo sandwich cookies
- 5 Tablespoons unsalted butter, melted
For the Cheesecake:
- ⅓ cup heavy whipping cream
- ½ cup white chocolate morsels
- 2 packages cream cheese, softened (8 ounces each)
- ½ cup granulated sugar
- 1 ½ teaspoons cornstarch
- ½ cup sour cream
- 1 teaspoon pure vanilla extract
- 2 large eggs
For the Garnish:
- ¼ cup butter, softened
- 2 cups powdered sugar
- ¾ cup marshmallow Fluff
- 2 Tablespoons heavy whipping cream
- 16 mini Oreo cookies
Instructions
- Prepare the crust: Place the Oreo sandwich cookies in a food processor and process them until they form fine crumbs. Melt the unsalted butter and mix it thoroughly with the cookie crumbs using a fork until fully combined. Press this mixture firmly into the bottom of an 8-inch square baking dish lined with parchment paper or foil.
- Bake the crust: Preheat the oven to 350°F (175°C). Bake the crust for about 8 minutes. Once done, remove it from the oven and allow it to cool while preparing the cheesecake filling.
- Melt the white chocolate: Using a double boiler, gently heat the heavy whipping cream over low heat until warm. Add the white chocolate morsels and stir continuously until the chocolate is completely melted and smooth. Remove from heat and set aside.
- Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese together with granulated sugar and cornstarch until fluffy and smooth. Add the sour cream, pure vanilla extract, and eggs, mixing until just combined. Slowly incorporate the melted white chocolate mixture, beating gently to blend everything together.
- Bake the cheesecake: Pour the cheesecake filling into the prepared crust. Reduce oven temperature to 300°F (150°C) and bake the cheesecake for approximately 35 minutes. Once the baking time is complete, turn the oven off and leave the cheesecake inside for an additional 20 minutes to set gently.
- Cool and chill: Remove the cheesecake from the oven and allow it to cool to room temperature. Refrigerate the cheesecake for at least 3 hours to fully set before cutting into small bite-sized pieces.
- Prepare the garnish: In a mixing bowl, beat softened butter with powdered sugar, marshmallow fluff, and heavy whipping cream on high speed for about 3-4 minutes until the mixture becomes fluffy and light.
- Decorate the cheesecake bites: Transfer the frosting to a pastry bag fitted with a star or French tip and pipe a small swirl atop each cheesecake bite. Finish each with a mini Oreo cookie placed on top. Serve and enjoy!
Notes
- Use a double boiler to melt white chocolate evenly without scorching. If unavailable, place a heatproof bowl over a saucepan of simmering water.
- Do not overbeat the cream cheese mixture as it may introduce too much air and affect texture.
- If you don’t have a food processor, place Oreos in a sealed plastic bag and crush them with a rolling pin until fine crumbs form.
- This recipe does not require a water bath, making it ideal for cheesecake beginners.
- Cheesecake bites can be served plain or topped with marshmallow frosting and mini Oreos for an elegant presentation.
- Try substituting the Oreo cookies with Nutter Butters or Mint Oreos for a delicious twist on the flavor.
