  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Pantry Staples

  • 3 Tbsp neutral oil (avocado oil recommended)
  • 3 Tbsp all-purpose flour (or gluten-free flour)
  • 2 cups vegetable broth
  • 1 1/2 Tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic powder (optional)
  • 2 Tbsp nutritional yeast

Produce

  • 1 medium white or yellow onion, chopped into small pieces
  • 4 cloves garlic, minced
  • 1 8-ounce package white mushrooms, chopped or sliced

Protein

  • 1 cup cooked white beans (canned beans recommended)

Grains & Pasta

  • 7 ounces (7-8) lasagna noodles, broken into bite-sized pieces (gluten-free noodles can be substituted)

Dairy Alternatives

  • 2 cups unsweetened dairy-free milk (soy milk recommended)

Instructions

  1. Sauté the onion and garlic: Heat a large pot over medium heat. Add the oil and chopped onion, cooking until soft and translucent, about 4 minutes. Add the minced garlic and cook until fragrant, approximately 2 minutes.
  2. Add flour and broth: Stir in the flour until combined with the onion and garlic mixture. Gradually pour in the vegetable broth while mixing thoroughly to avoid lumps.
  3. Add pasta: Break the lasagna noodles into bite-sized pieces and add them to the pot, stirring to evenly distribute.
  4. Add milk and seasonings: Pour in the dairy-free milk, then add Italian seasoning, salt, pepper, and optional garlic powder. Stir frequently and cook until the noodles are fully cooked, about 7-8 minutes.
  5. Add mushrooms, beans, and nutritional yeast: Stir in the chopped mushrooms, cooked white beans, and nutritional yeast. Cook for another 3-4 minutes, or until the mushrooms become soft.
  6. Season and serve: Taste the pasta and adjust seasoning as needed with additional salt, pepper, or Italian seasoning. Remove from heat, divide into bowls, and garnish with fresh parsley or crushed red pepper if desired.

Notes

  • Make it your own by substituting Italian seasoning with 2 tsp each of dried thyme, dried oregano, dried rosemary, and dried basil.
  • If you don’t have lasagna noodles, any pasta type from your pantry can be used instead.
  • Recommended garnishes include mozzarella cheese, fresh basil, or additional nutritional yeast for extra flavor.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
