  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 1 1/2 lb. boneless skinless chicken breasts
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 Tbsp. extra-virgin olive oil, divided

Vegetables & Aromatics

  • 1 small shallot, diced
  • 8 oz. baby bella mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tsp. fresh thyme leaves
  • 1 tsp. dried oregano
  • 3 cups packed baby spinach

Liquids & Dairy

  • 1 cup low-sodium chicken broth
  • 1 1/4 cups half and half
  • Pinch crushed red pepper flakes
  • 3/4 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese

Main Carb

  • 1 (17-oz.) package gnocchi

Instructions

  1. Season and Sear Chicken: Season both sides of the chicken breasts generously with kosher salt and freshly ground black pepper. Heat 1 tablespoon of extra-virgin olive oil in a large skillet over medium-high heat. Add the chicken breasts to the hot oil and cook until golden brown on each side, about 4 minutes per side. Remove the chicken from the skillet and set aside.
  2. Sauté Vegetables and Build Sauce: Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the diced shallot and sliced baby bella mushrooms, cooking until they turn golden and soften, approximately 5 minutes. Stir in the minced garlic, fresh thyme leaves, and dried oregano, cooking for another minute until fragrant. Pour in the low-sodium chicken broth and use a spoon to scrape up any browned bits from the pan bottom. Slowly whisk in the half and half, then bring the mixture to a gentle simmer. Season the sauce with salt, pepper, and a pinch of crushed red pepper flakes for a subtle kick.
  3. Add Gnocchi and Simmer Chicken: Stir the gnocchi into the simmering sauce, then return the seared chicken breasts to the skillet. Continue to simmer, stirring occasionally, until the chicken is fully cooked through and reaches an internal temperature of 165°F, about 8 to 10 minutes.
  4. Incorporate Cheese and Spinach: Remove the chicken from the skillet once again. Stir in the shredded mozzarella and freshly grated Parmesan cheese until fully melted into the creamy sauce. Add the packed baby spinach and stir until it wilts, incorporating its freshness into the dish.
  5. Serve: Slice the cooked chicken breasts into pieces and return them to the skillet. Taste and adjust the seasoning with additional salt and freshly ground black pepper as desired. Serve the creamy chicken and gnocchi hot, all from one pan for an easy and satisfying meal.

Notes

  • Ensure chicken breasts are of even thickness for uniform cooking.
  • You can substitute baby bella mushrooms with cremini or white mushrooms.
  • For a richer sauce, use heavy cream instead of half and half.
  • If fresh spinach is not available, frozen spinach can be used but should be thawed and drained beforehand.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated gently on the stovetop.
  • For a dairy-free version, substitute cheeses with vegan alternatives and use coconut milk instead of half and half.
