Ingredients
Base Ingredients
- 1 tablespoon extra virgin olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup quick cooking brown rice (do not use instant rice)
- 2 cups milk
- 1 cup vegetable broth
- 1/2 teaspoon salt, or to taste
Vegetables and Protein
- 2.5 cups broccoli florets, cut into bite-sized pieces
- 2 cups chickpeas, rinsed and drained
Cheese
- 1 cup grated cheddar cheese (or your favorite cheese)
Instructions
- Sauté the Aromatics: Heat the olive oil in a large skillet or sauté pan over medium heat. Add the chopped onion and cook for about 5 minutes until softened. Add the minced garlic and sauté for an additional 30 seconds until fragrant.
- Toast the Rice and Add Liquids: Add the uncooked quick cooking brown rice to the pan and toast it for 1-2 minutes, stirring frequently. Pour in the milk and vegetable broth, then add the salt. Stir everything together and bring the mixture to a boil.
- Simmer the Rice: Once boiling, reduce the heat to low. Cover the pan with a lid and cook for about 10 minutes, or until the rice is nearly done but still has 5-8 minutes left of cooking time.
- Add Broccoli and Chickpeas: Carefully remove the lid and stir in the broccoli florets and rinsed chickpeas. Cover the pan again and continue to cook for about 5 more minutes until the broccoli is tender to your liking and the rice is fully cooked.
- Finish with Cheese: Remove the pan from heat. Stir in half of the grated cheddar cheese until melted and creamy. Taste and adjust the salt as needed. Then, sprinkle the remaining cheese on top of the casserole. Let it stand for a few minutes until the cheese melts completely.
- Serve and Enjoy: Scoop out portions of this cheesy, hearty casserole and serve warm. Enjoy this simple yet delicious one-pan meal.
Notes
- Use quick cooking brown rice specifically; instant brown rice is not suitable. White rice can be used as a substitute if preferred.
- When substituting rice or adding vegetables, add extra liquid (about 1/2 cup) beyond what the rice package recommends to ensure proper cooking consistency.
- For crisp-tender broccoli, cook for 3-5 minutes; for softer broccoli, cook about 8 minutes. Alternatively, microwave broccoli separately and add it at the end.
- Store leftovers in the refrigerator for 3-5 days.
- Optional flavor enhancers: add 1 tablespoon of Dijon mustard or Worcestershire sauce for umami depth. Fresh herbs (1 tablespoon) or dried herbs/spices (1-2 teaspoons) can also be added for extra flavor.
