Ingredients
Main Ingredients
- 1 pound ground beef (80/20)
- 1 packet (3 tablespoons) taco seasoning
- 1 cup long grain white rice
- 10 ounce can Rotel tomatoes
- 15 ounce can black beans, drained and rinsed
- 1 cup red enchilada sauce
- 2 cups chicken broth
- 8 ounces shredded sharp cheddar cheese
- Kosher salt, to taste
- Fresh cracked pepper, to taste
Toppings and Serving
- Sour cream, for garnish
- Sliced green onion, for garnish
- Chopped cilantro, for garnish
- Sliced jalapenos, optional for garnish and heat
- Tortilla chips, for serving
Instructions
- Brown the ground beef: Heat a large sauté pan over medium-high heat. Add the ground beef and cook, crumbling it with a spatula, until it is fully browned and no longer pink.
- Add ingredients and season: Stir in the taco seasoning, rice, Rotel tomatoes, black beans, enchilada sauce, chicken broth, and add a couple of large pinches of kosher salt and freshly cracked pepper. Mix well to combine all the ingredients evenly.
- Bring to simmer: Cook over medium heat until the mixture comes to a gentle simmer. Stir well and scrape any rice stuck to the bottom of the pan to prevent burning.
- Cook the rice: Cover the pan with a tight-fitting lid, reduce the heat to medium-low, and let it cook for about 20 minutes or until the rice is tender and fully cooked. Check seasoning and add more salt and pepper if needed.
- Melt the cheese: Sprinkle the shredded sharp cheddar cheese on top of the cooked rice mixture. Cover again and cook for a couple more minutes until the cheese is melted. Alternatively, you can transfer the pan to the oven and broil for 1-2 minutes to melt and slightly brown the cheese.
- Garnish and serve: Remove from heat and top with sour cream, chopped cilantro, sliced green onions, and jalapenos if desired. Serve alongside crunchy tortilla chips for added texture and flavor. Enjoy your meal!
Notes
- Use a large sauté pan or a 5-quart braising pan with a tight-fitting lid to ensure the rice cooks evenly.
- If the rice isn’t fully cooked after 20 minutes, add a splash of additional broth and continue simmering until tender.
- For extra heat, add diced jalapeños or a dash of hot sauce before simmering the mixture.
- To make the dish creamier, stir in a few spoonfuls of sour cream or heavy cream before adding the cheese.
