This homemade Oatmeal Banana Bread is a moist, flavorful treat combining the heartiness of oats with the natural sweetness of ripe bananas and warm apple pie spice. Perfect for breakfast or a snack, this bread is easy to make with pantry staples and can be adapted for vegan diets. Baked to golden perfection, it’s tender on the inside with a slightly crisp oat topping.

  • Total Time: 1 hour 5 minutes
  • Yield: 1 loaf (about 10-12 slices)

Ingredients

Dry Ingredients

  • 1 ¼ cup all-purpose flour (or gluten-free baking mix)
  • 1 cup quick oats
  • ¾ cup light brown sugar
  • 2 teaspoons apple pie spice (or pumpkin pie spice)
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Wet Ingredients

  • 3 very ripe bananas (1 ½ cups mashed)
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ¼ cup milk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Prepare a 9×5 inch loaf pan by cutting a 9-inch wide strip of parchment paper to fit the bottom and long edges of the pan. Grease or spray the pan and parchment paper to prevent sticking.
  2. Mash Bananas: In a bowl, mash the very ripe bananas until smooth and measure out 1 ½ cups of mashed banana to use in the batter.
  3. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour (or gluten-free baking mix), quick oats, light brown sugar, apple pie spice, salt, baking powder, and baking soda. Stir until evenly mixed.
  4. Add Wet Ingredients: Add the mashed bananas, melted unsalted butter, eggs, milk, and vanilla extract to the dry ingredient mixture. Mix until the batter is smooth and well combined.
  5. Pour Batter and Bake: Pour or scoop the batter into the prepared loaf pan. Optionally, sprinkle additional oats over the top for texture. Bake at 350°F for 45 to 60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  6. Cool Bread: Let the banana bread rest in the pan for 15 minutes. Then carefully lift it out using the parchment paper edges. Allow the loaf to cool completely on a wire rack before slicing.

Notes

  • Vegan Alternative: Substitute unsalted butter with dairy-free butter or coconut oil, milk with almond or coconut milk, and replace eggs with flax eggs (mix 6 tablespoons water with 2 tablespoons ground flaxseed, let sit 10 minutes) or a commercial vegan egg substitute.
  • Storing Leftovers: Store leftover banana bread in an airtight container in the refrigerator for up to 5 days.
  • Freezing Leftovers: Wrap the bread tightly in plastic wrap, then in foil before freezing. It can be frozen for 3-6 months. Thaw overnight in the refrigerator.
  • Reheating: Reheat slices in the microwave for a few seconds and enjoy with a spread of butter for extra flavor.
