These No-Bake Matcha Oatmeal Bars are a healthy, chewy, and easy snack perfect for a quick energy boost. Made with wholesome oats, natural peanut butter, and vibrant matcha powder, they come together effortlessly without any baking. Sweetened naturally with honey or maple syrup and enhanced with a hint of vanilla, these bars are perfect for a nutritious treat on the go or a satisfying midday snack.

  • Total Time: 1 hour 15 minutes
  • Yield: 12 bars

Ingredients

Dry Ingredients

  • 2 cups old-fashioned rolled oats
  • 1–2 tablespoons matcha powder
  • Pinch sea salt
  • Optional: ¼ cup white chocolate chips

Wet Ingredients

  • ½ cup natural peanut butter
  • ⅓ cup honey or maple syrup
  • 2 tablespoons coconut oil, melted
  • ½ teaspoon vanilla extract

Instructions

  1. Heat wet ingredients: In a small saucepan over low heat, gently warm the peanut butter, honey (or maple syrup), and melted coconut oil until the mixture is smooth and combined. This will make it easier to mix with the dry ingredients.
  2. Mix dry ingredients: In a large bowl, combine the rolled oats, matcha powder, and a pinch of sea salt. Stir to evenly distribute the matcha and salt throughout the oats.
  3. Combine mixtures: Pour the warm peanut butter mixture over the oat mixture. Add the vanilla extract and stir thoroughly until all the oats are evenly coated and the mixture is sticky and cohesive.
  4. Press into pan: Line an 8×8-inch pan with parchment paper. Transfer the oat mixture into the pan and press down very firmly using the back of a spatula or your hands to compact the mixture well, preventing crumbling once set.
  5. Chill: Place the pan in the refrigerator and chill for 1 to 2 hours or until the bars are firm and hold together well.
  6. Slice and serve: Once firm, remove from the refrigerator and slice into 12 bars. Store the bars in the fridge to maintain the best texture and freshness.

Notes

  • Press the mixture very firmly into the pan to prevent the bars from crumbling after chilling.
  • Adjust the amount of matcha powder gradually to control the bitterness level to your preference.
  • Store the bars in the refrigerator to maintain their chewy texture and freshness.
  • For vegan bars, substitute honey with maple syrup as the sweetener.
