Ingredients
Dry Ingredients
- 200 g (1 ¾ cups) walnuts or pecans
- 80 g (¾ cup + 2 tsp) unsweetened cocoa powder
- 2 teaspoons espresso powder (optional)
- ½ teaspoon sea salt
Wet Ingredients
- 300 g (2 cups) medjool dates, pitted (about 15 dates)
- 200 g (¾ cup + 2 tbsp) hazelnut butter
- ½ teaspoon vanilla powder
For Frosting and Toppings
- 1 batch vegan ganache for frosting
- Toasted hazelnuts (optional)
- Freeze-dried raspberries or strawberries (optional)
Instructions
- Prepare the Dry Mix: Add the walnuts, cocoa powder, espresso powder (if using), and sea salt to a food processor. Blitz for a couple of minutes until the mixture resembles a fine crumb consistency.
- Add Wet Ingredients: Add the pitted dates, hazelnut butter, and vanilla powder to the food processor. Blend again until the mixture sticks together, forming a dough-like consistency suitable for shaping.
- Form Brownie Base: Press the raw brownie mixture evenly into a baking pan lined with parchment paper. Smooth the surface using the back of a spoon to create an even layer.
- Chill: Place the pan in the refrigerator to firm up for 1–2 hours, allowing the mixture to set properly.
- Prepare Ganache: While the brownies chill, make a batch of vegan chocolate ganache or vegan nutella to use as frosting.
- Apply Frosting and Toppings: Spread the vegan ganache evenly over the chilled brownie base using an offset spatula. Sprinkle toasted hazelnuts and freeze-dried raspberries or strawberries on top, if desired.
- Final Chill: Return the frosted brownies to the refrigerator for another hour, ensuring the ganache firms up nicely.
- Serve: Once set, slice the brownies into individual servings and enjoy.
- Storage: Store brownies in a sealed container in the fridge for up to one week, or keep at room temperature for a day in cooler climates. To freeze, separate slices with parchment paper and keep in an airtight container for up to 3 months.
Notes
- Use Dutch-processed cocoa powder for a deeper chocolate flavor or raw cacao powder for a slightly more bitter taste.
- If dates are dry, soak them in boiled water for 20 minutes and drain before use to ensure proper blending and sweetness.
- Hazelnut butter can be substituted with any nut butter such as almond, cashew, or peanut butter depending on preference.
- Vanilla powder may be swapped for 1 teaspoon of vanilla extract, vanilla bean paste, or the seeds from a scraped vanilla pod for equivalent flavor.
