Ingredients
Main Ingredients
- 1 ½ cups rolled oats
- 1 ripe banana, mashed
- ½ cup almond butter
- ½ cup crushed walnuts
- ¼ cup maple syrup
- 2 tablespoons ground flaxseed
- ¼ teaspoon salt
- ¼ cup mini chocolate chips
- 1 scoop protein powder (optional)
- ~1 tablespoon almond milk (optional)
Instructions
- Mash Banana and Mix Base Ingredients: In a large bowl, thoroughly mash the ripe banana until smooth. Then stir in the rolled oats, almond butter, maple syrup, ground flaxseed, salt, and protein powder if using. If the mixture is too crumbly, add approximately 1 tablespoon of almond milk to help bind the ingredients together.
- Fold in Nuts and Chocolate Chips: Gently fold the crushed walnuts and mini chocolate chips into the mixture to distribute them evenly without breaking them down too much.
- Chill the Dough: Place the mixture in the refrigerator and chill for 20 minutes to firm up, making it easier to shape into balls.
- Form Energy Balls: After chilling, scoop the dough and roll it into approximately 1-inch diameter balls using your hands.
- Store and Enjoy: Enjoy immediately or store the energy balls in an airtight container in the refrigerator for up to one week, or freeze for longer storage to enjoy later.
Notes
- You can substitute almond butter with any nut or seed butter of your choice.
- For a vegan version, ensure the protein powder and chocolate chips are vegan-friendly.
- Add more almond milk gradually if the mixture seems too dry to hold shape.
- These energy balls can be customized by adding dried fruit, seeds, or spices like cinnamon.
- If freezing, let the balls thaw for a few minutes at room temperature before eating for best texture.
