This Mushroom Frittata is a delicious and protein-packed baked egg dish packed with sautéed onions, fresh spinach, juicy cherry tomatoes, mushrooms, and melty mozzarella cheese. It’s a perfect vegetarian breakfast, brunch, or light dinner option that’s easy to prepare and customize with your favorite toppings.

  • Total Time: 50-55 minutes
  • Yield: 6 servings

Ingredients

Vegetables

  • 1 cup diced yellow onion
  • 1 cup chopped baby spinach
  • 1 cup cherry tomatoes, sliced in half
  • ½ cup sliced mushrooms

Dairy & Eggs

  • 8 large eggs
  • ½ cup shredded mozzarella cheese (cheddar or parmesan can be substituted)
  • ½ cup heavy cream (alternatively Greek yogurt or sour cream)

Spices

  • ½ tsp ground mustard
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Prepare your quiche pan or pie dish by spraying it with nonstick cooking spray and placing it on top of a baking sheet.
  2. Layer the vegetables: Evenly spread 1 cup of diced yellow onion in the pan, then sprinkle 1 cup chopped baby spinach over the onions. Arrange 1 cup of halved cherry tomatoes on top, followed by ½ cup shredded cheese and ½ cup sliced mushrooms. Layering helps keep the veggies evenly distributed in the frittata.
  3. Whisk the egg mixture: In a medium bowl, whisk together 8 large eggs, ½ cup heavy cream, ½ tsp ground mustard, ½ tsp garlic powder, ½ tsp salt, and ¼ tsp ground black pepper until fully combined and smooth.
  4. Pour over veggies: Gently pour the egg mixture over the layered vegetables in the pan, allowing it to seep around but helping the veggies stay in place. Use a fork to rearrange vegetables if needed.
  5. Bake the frittata: Place the pan in the oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean, indicating it’s fully cooked and fluffy.
  6. Cool and serve: Remove the frittata from the oven and let it cool for a few minutes. Slice it into wedges and serve with optional toppings such as hot sauce, salsa, avocado, or sour cream for extra flavor.

Notes

  • You can substitute mozzarella with cheddar or parmesan cheese based on your preference.
  • Heavy cream can be replaced with Greek yogurt or sour cream for a tangy twist and slightly lighter texture.
  • Feel free to customize with additional vegetables, herbs, or spices to suit your taste.
  • Make sure not to overbake to avoid a dry frittata; check doneness with a toothpick.
