These delightful Mochi Doughnuts combine the chewy texture of glutinous rice flour with a crispy fried exterior, coated in a sweet and aromatic cinnamon sugar blend. Perfect as a unique treat, these doughnuts are easy to make and bring a fun twist to traditional fried dough recipes.

  • Total Time: 15 minutes
  • Yield: 10-12 doughnuts

Ingredients

For Mochi Dough

  • 1 cup Glutinous Rice Flour
  • 2 tablespoon All Purpose Flour (Maida)
  • ¼ teaspoon Baking Soda
  • 2 tablespoon Sugar
  • ½ teaspoon Salt
  • 1 tablespoon Butter
  • ½ cup Hot Water (or as needed)
  • Refined Oil for deep frying

For Cinnamon Sugar Coating

  • ½ cup Caster Sugar
  • 2 teaspoon Ground Cinnamon

Instructions

  1. Prepare Cinnamon Sugar Coating: Mix together the caster sugar and ground cinnamon in a bowl thoroughly. Set this mixture aside for coating the doughnuts later.
  2. Make Mochi Dough: In a mixing bowl, combine the glutinous rice flour, all-purpose flour, baking soda, salt, sugar, and butter. Gradually add hot water little by little while mixing to moisten the flour and form a dough. Knead the dough well until smooth and set aside to rest for 5 minutes.
  3. Shape the Doughnuts: Take small portions of the rested dough and roll each into a smooth ball shape, ready for frying.
  4. Fry the Mochi Doughnuts: Heat a sufficient amount of refined oil in a deep pan over medium-low heat, ensuring it is hot but not too high to prevent burning. Gently drop the dough balls into the oil, stirring carefully with a wooden spoon to prevent them from sticking to the bottom or to each other. Fry the doughnuts for 3 to 5 minutes until they turn golden and are cooked through. Remove them from oil and drain on paper towels to absorb excess oil.
  5. Coat with Cinnamon Sugar: While the doughnuts are still warm, coat each doughnut thoroughly in the cinnamon sugar mixture. Serve immediately to enjoy their optimal texture and flavor.

Notes

  • Ensure the oil temperature is medium-low to allow the doughnuts to cook evenly without burning.
  • You can adjust the sugar quantity in the dough or coating according to your preferred sweetness level.
  • If the dough feels too dry, add hot water slowly until it reaches a pliable texture.
  • These doughnuts are best served fresh as they tend to harden when cooled.
  • Use glutinous rice flour specifically to get the desired chewy texture characteristic of mochi.
