These Mississippi Chicken Sliders are a delicious, slow-cooked chicken sandwich recipe featuring tender shredded chicken infused with ranch seasoning and pepperoncini peppers. Served on sweet Hawaiian rolls with Pepper Jack cheese and a buttery ranch-parsley topping, these sliders are perfect for parties, game days, or casual get-togethers.

  • Total Time: 6 hours 35 minutes to 8 hours 40 minutes
  • Yield: 24 sliders

Ingredients

Slider Sandwiches

  • 24 Hawaiian rolls
  • 1 ½ lbs boneless, skinless chicken breast
  • 1 packet Ranch seasoning mix
  • 8 tablespoons butter
  • 8 oz whole pepperoncini peppers plus ½ the juice from the jar
  • 8 slices Pepper Jack cheese
  • ½ cup Dijon mustard

Butter Sauce

  • 4 tablespoons butter
  • 1 tablespoon Ranch dressing mix
  • 1 tablespoon dried parsley

Instructions

  1. Prepare the chicken: Add the boneless, skinless chicken breasts, ranch seasoning mix, 8 tablespoons of butter, whole pepperoncini peppers, and half the juice from the pepperoncini jar into a slow cooker. Cook on low for 6-8 hours or on high for 4 hours until the chicken is tender and fully cooked.
  2. Shred the chicken: Once cooked, use two forks to shred the chicken directly in the slow cooker, mixing it thoroughly with the juices, ranch seasoning, butter, and pepperoncini for maximum flavor.
  3. Assemble the sliders: Slice the Hawaiian rolls in half horizontally and lay them out on a cookie sheet. Evenly spread Dijon mustard onto the bottom half of the rolls. Next, layer the shredded chicken over the mustard, then place the Pepper Jack cheese slices on top of the chicken. Cover with the top halves of the rolls to create individual sliders.
  4. Prepare the butter sauce: In a small bowl, melt 4 tablespoons of butter and stir in 1 tablespoon of ranch dressing mix along with 1 tablespoon of dried parsley until combined.
  5. Brush and bake: Brush the prepared butter sauce generously over the tops of the slider buns. Cover the entire pan tightly with aluminum foil to keep the moisture in, then place it in a preheated oven at 350°F (175°C). Bake covered for about 15 minutes.
  6. Finish baking: Remove the foil and continue baking for an additional 5-10 minutes, or until the tops of the sliders turn golden brown and slightly crispy. Remove from the oven and serve warm.

Notes

  • If you don’t have a slow cooker, you can cook the chicken in a covered casserole dish in the oven at 325°F for about 1.5 to 2 hours until tender.
  • For a spicier kick, add some sliced jalapeños or hot sauce to the shredded chicken before assembling the sliders.
  • These sliders reheat well in the oven wrapped in foil to keep moist.
  • You can substitute the Pepper Jack cheese with mozzarella or cheddar if preferred.
  • Make sure to cover the sliders while baking initially so the buns do not dry out.
