Ingredients
Eggplant
- 1 large eggplant
Miso Glaze
- 3 tbsp white miso
- 2 tbsp mirin
- 2 tbsp sake (optional)
- 1 tbsp grapeseed oil
- 1 tbsp honey
- 1 tbsp dark soy sauce
- 1 clove garlic, minced
Garnish
- Toasted white and black sesame seeds
- Green onions, sliced
Instructions
- Preheat the air fryer: Set your air fryer to 375°F on the Air Fry mode to ensure it reaches the proper temperature for cooking the eggplant.
- Make the miso sauce: In a medium bowl, combine the white miso, mirin, sake (if using), grapeseed oil, honey, dark soy sauce, and minced garlic. Whisk thoroughly until the mixture is smooth and fully blended.
- Prepare the eggplant: Slice the eggplant into 2-inch thick rounds. Use a knife to score the surface diagonally in one direction, then repeat in a crisscross pattern. This creates texture for better sauce absorption and a visually appealing look.
- Apply the miso glaze: Generously coat the scored side of each eggplant slice with the miso sauce, ensuring it seeps into the grooves.
- Cook the eggplant: Place the glazed eggplant rounds in the air fryer basket in a single layer. Air fry at 375°F on Air Fry mode for 15 minutes until tender and caramelized.
- Garnish and serve: Once cooked, sprinkle toasted white and black sesame seeds and sliced green onions over the eggplant. Serve immediately and enjoy!
Notes
- Oven Instructions: Preheat the oven to 425°F. Bake the glazed eggplant slices on a baking sheet for 25 minutes until tender. For added caramelization, broil for an additional 5 minutes, watching carefully to prevent burning.
- Using sake is optional, but it adds a subtle depth of flavor.
- Make sure to score the eggplant to help the glaze penetrate and enhance flavor.
