Topped with fresh ingredients like sour cream, salsa, and avocado, this recipe brings classic Mexican flavors straight to your plate in an easy-to-make skillet dish.

  • Total Time: 12 minutes
  • Yield: 1 serving

Ingredients

For the Mexican Omelette

  • 3 large eggs
  • ¼ cup milk of choice
  • 1 tablespoon olive oil or other neutral oil
  • 3 tablespoons chopped yellow onion
  • ¼ cup chopped bell pepper (green, red, yellow, or orange)
  • Half of one Roma tomato, diced
  • ¼ cup shredded Mexican cheese

Suggested Toppings (All Optional)

  • Sour cream
  • Salsa or pico de gallo
  • Chopped fresh cilantro
  • Sliced avocado
  • Diced jalapeños

Instructions

  1. Whisk the Eggs and Milk: Crack the eggs directly into a medium bowl, add the milk of your choice, and whisk vigorously until the mixture is pale, foamy, and evenly combined with no visible streaks of yolk or whites. Set aside.
  2. Sauté Vegetables: Heat a medium skillet over medium heat. Add the olive oil and swirl to coat the pan. Once the oil is hot and shimmering, add chopped onion, bell pepper, and diced Roma tomato. Sauté for about 3 minutes or until the vegetables are tender, then transfer them to a small bowl.
  3. Prepare the Pan and Cook Eggs: Carefully wipe the skillet clean with paper towels to remove vegetable residues. Add more oil if necessary, then pour the egg mixture into the center of the skillet. Use a spatula to gently spread the eggs evenly to the edges. Cook undisturbed for 2 to 3 minutes or until the eggs are nearly set.
  4. Add Vegetables and Cheese: Evenly spread the sautéed vegetables over the top of the omelette and sprinkle the shredded Mexican cheese on top. Let cook undisturbed for another 1 to 2 minutes, or until the cheese melts.
  5. Fold and Serve: Remove the skillet from heat. Using a spatula, carefully slide under one edge of the omelette and fold it in half over the other side. Slide the folded omelette onto a plate. Top with optional sour cream, salsa, cilantro, avocado slices, and jalapeños as desired. Serve immediately for best flavor and texture.

Notes

  • Make it Keto: Depending on your keto plan, this omelette may fit as-is. To reduce carbs, omit the onion and/or the Roma tomato.
