  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 pre-made pizza crust, 11 inches round OR 2 flatbreads (Flatout flatbreads recommended)
  • 3/4 cup red enchilada sauce
  • 1 cup shredded Mozzarella cheese
  • 1 cup shredded Colby jack, Monterey jack or cheddar cheese
  • 1 cup shredded chicken breast
  • 1/4 red onion, diced small
  • 1/2 cup corn kernels

Toppings (After Baking)

  • 3 tablespoons queso fresco or cotija cheese
  • 1/4 cup fresh cilantro, chopped

Elote Sauce

  • 3 tablespoons mayonnaise
  • Juice of 1 lime
  • 1/8 tsp chili powder

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the flatbread.
  2. Prepare Flatbread: Place your flatbread or pre-made pizza crust on a large baking sheet to get ready for toppings.
  3. Spread Enchilada Sauce: Evenly spread 3/4 cup of red enchilada sauce over the flatbread using a spoon to cover the surface.
  4. Add Toppings: Sprinkle shredded mozzarella cheese and shredded Colby jack, Monterey jack, or cheddar cheese evenly over the sauce. Then add diced red onion, shredded chicken breast, and corn kernels evenly on top.
  5. Bake: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is fully melted and begins to brown lightly.
  6. Cool and Garnish: After baking, transfer the flatbread to a cutting board and let it cool for 5 minutes. Sprinkle with chopped cilantro and queso fresco or cotija cheese.
  7. Make Elote Sauce: In a small bowl, combine mayonnaise, lime juice, and chili powder. Stir well to blend all ingredients.
  8. Serve: Cut the flatbread into slices, drizzle generously with the prepared elote sauce, and serve warm for best flavor.

Notes

  • If you prefer spicier, add extra chili powder or a dash of hot sauce to the elote sauce.
  • The flatbread can be substituted with a tortilla or naan for variation.
  • To make this gluten-free, use a gluten-free flatbread or crust.
  • The elote sauce can be prepared ahead of time and stored in the refrigerator for up to 2 days.
