Ingredients
Tzatziki Sauce
- 1 cup plain Greek yogurt
- 1/2 cup grated English cucumber, excess moisture squeezed out
- 3 tablespoons fresh lemon juice
- 2 garlic cloves, peeled and grated
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Salad Mix
- 4 cups cooked chicken, chopped or shredded
- 1 cup diced cucumber
- 1/2 cup diced celery
- 1/2 cup diced red onion
- 1/2 cup crumbled feta cheese
Instructions
- Prepare the Tzatziki Sauce: In a medium bowl, combine the Greek yogurt, grated cucumber (with excess moisture squeezed out), fresh lemon juice, grated garlic, chopped fresh dill, chopped fresh parsley, sea salt, and freshly ground black pepper. Stir the mixture until all ingredients are well incorporated and the sauce is smooth.
- Combine Salad Ingredients: Add the chopped or shredded cooked chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese into the bowl with the tzatziki sauce. Gently stir until all ingredients are evenly mixed and coated with the sauce.
- Adjust Seasoning: Taste the salad and adjust the seasoning as needed by adding extra lemon juice, salt, or pepper to your preference for brightness and flavor balance.
- Serve: Serve your Mediterranean Tzatziki Chicken Salad immediately over a bed of greens, with pita chips, inside a pita pocket, wrapped in lettuce cups, or as a sandwich or wrap filling. Optionally, top with chopped tomatoes, kalamata olives, extra feta cheese, and fresh herbs for added flavor and presentation.
Notes
- How to Store: Store the tzatziki chicken salad in an airtight container in the refrigerator. It is best consumed within 3 to 4 days. The flavors develop more over time, but be sure to stir the salad before each serving to reincorporate any separated liquid.
