Ingredients
Chicken
- 4-6 boneless skinless chicken thighs or breasts
- 2 teaspoons Italian seasoning, divided
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 tablespoons oil
Roasted Red Pepper Sauce
- ⅔ cup chopped roasted red peppers
- 1 teaspoon Italian seasoning
- 1 tablespoon minced garlic
- ½ teaspoon salt (included above)
- ¼ teaspoon black pepper (included above)
- 1 cup heavy cream
- 2 tablespoons crumbled feta cheese (optional)
- Thinly sliced fresh basil (optional)
Instructions
- Prepare the Red Pepper Sauce: Combine the chopped roasted red peppers, 1 teaspoon of Italian seasoning, 4 tablespoons of oil, minced garlic, ½ teaspoon salt, and ¼ teaspoon black pepper in a food processor or blender. Pulse until the mixture becomes smooth and well blended.
- Cook the Chicken: Grease a large skillet with a small amount of oil. Season the 4-6 boneless skinless chicken thighs or breasts with the remaining 1 teaspoon of Italian seasoning. Place the chicken in the skillet over medium heat and cook for 6-8 minutes on each side until they are fully cooked through and lightly browned on the outside. Transfer the cooked chicken to a plate and cover to keep warm.
- Heat the Sauce: Pour the pureed red pepper mixture into the same skillet and stir over medium heat for 2-3 minutes until it is heated through and aromatic.
- Add Cream and Thicken: Add 1 cup of heavy cream to the skillet and stir continuously until the sauce thickens and becomes creamy in texture.
- Toss Chicken in Sauce and Garnish: Return the cooked chicken to the skillet and toss gently to coat each piece in the creamy roasted red pepper sauce. Garnish with 2 tablespoons of crumbled feta cheese and thinly sliced fresh basil, if using. Serve warm.
Notes
- You can substitute chicken breasts for thighs based on preference.
- Roasted red peppers can be store-bought jarred peppers, drained and chopped, or you can roast your own using fresh red bell peppers.
- Optional garnishes like feta cheese and fresh basil add authentic Mediterranean flavors but can be omitted to suit dietary needs.
- Use medium heat carefully to avoid burning the sauce or chicken; stirring during sauce preparation is important for even heating and thickening.
- Leftover sauce can be stored in the fridge for up to 3 days and reheated gently.
