Ingredients
Meatloaf Ingredients:
- 1 ½ pounds 90% lean ground beef (or ground turkey)
- ½ cup panko breadcrumbs
- 1 large egg, whisked
- 2-3 Tablespoons fresh parsley, finely chopped
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon ketchup
- ¾ teaspoon Kosher salt
- ¼ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Sauce Ingredients:
- ½ cup ketchup or BBQ sauce (or half and half mix)
- 2 Tablespoons light brown sugar
For Serving:
- Potatoes
- Green beans
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Lightly spray a muffin pan with cooking spray and set aside.
- Mix meatloaf ingredients: In a large bowl, combine the 1 ½ pounds lean ground beef, ½ cup panko breadcrumbs, 1 whisked egg, 2-3 Tablespoons chopped fresh parsley, 1 Tablespoon Worcestershire sauce, 1 Tablespoon ketchup, ¾ teaspoon Kosher salt, ¼ teaspoon black pepper, ½ teaspoon garlic powder, and ½ teaspoon onion powder. Mix gently just until combined to keep the meat tender—avoid overmixing.
- Form muffins: Divide the meat mixture evenly among the muffin pan cups. Press down gently to ensure each is compacted well.
- Prepare sauce: In a small bowl, mix together ½ cup ketchup or BBQ sauce with 2 Tablespoons light brown sugar. Set aside.
- Bake first phase: Bake the meatloaf muffins for 15 minutes at 350°F.
- Drain grease and add sauce: Remove from the oven and use a fork and paper towel to absorb any excess grease. Pour the prepared sauce evenly over each meatloaf muffin. Optionally, add some extra black pepper on top.
- Bake final phase: Return the muffins to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
- Serve: Serve the meatloaf muffins warm alongside potatoes and green beans.

Notes
- Substitutions: Fresh onion (1 cup, chopped) and garlic (4 cloves, minced) may be sautéed in a little olive oil and added to the meat mixture for extra flavor.
- Add spice: For heat, add a pinch of red pepper flakes to the meat or mix chili sauce or sriracha into the meatloaf sauce.
- Extra sauce: Make an additional batch of sauce if you prefer your meatloaf extra saucy, for brushing on during the last 10 minutes of baking or for dipping.
- Storage: Store leftover meatloaf muffins in a covered container in the refrigerator for up to 4 days.
