Ingredients
Pasta and Vegetables
- 500g / 1 lb linguine or other long pasta
- 200g / 7 oz Tenderstem broccoli
- 100g / 3½ oz asparagus
Sauce and Flavorings
- 70g / 1/2 cup capers
- 1/2 lemon (juiced)
- 3 cloves garlic (sliced)
- 2 tbsp olive oil
- 30g / 2 tbsp butter
- Parmesan cheese to taste
- Salt and freshly ground black pepper to taste
Instructions
- Prepare Vegetables: Bring a large pot of salted water to a boil. Trim the woody ends off the Tenderstem broccoli and asparagus. Add them to the boiling water and cook for 3 minutes until tender but still crisp. Remove vegetables with a slotted spoon and set aside, leaving the water boiling for the pasta.
- Cook Pasta: Add the linguine to the same pot of boiling water and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water before draining the pasta.
- Make Lemon Garlic Sauce: While the pasta cooks, warm a large pan over low heat. Add olive oil and butter, then lightly fry the sliced garlic for about 30 seconds, making sure it does not brown or burn. Add the juice of 1/2 lemon and stir to combine.
- Toss Vegetables in Sauce: Add the cooked asparagus, broccoli, and capers to the pan with the lemon-garlic oil. Season with a pinch of salt and gently toss them to evenly coat with the sauce. Remove from heat.
- Combine Pasta and Sauce: Drain the linguine and add it to the pan with the vegetables. Pour in a splash of the reserved pasta water along with grated Parmesan cheese and freshly ground black pepper. Toss everything together thoroughly to combine and thicken the sauce. Taste and adjust salt if needed.
- Serve: Serve the pasta warm, optionally sprinkled with more Parmesan cheese for extra flavor.
Notes
- Use fresh garlic and slice it thinly to avoid overpowering the delicate sauce.
- Reserve some pasta water to help the sauce adhere to the pasta and to adjust consistency.
- Capers add a salty tang; rinse them if you prefer a milder flavor.
- Feel free to substitute linguine with spaghetti, fettuccine, or any long pasta you prefer.
- For a vegan option, omit the butter and Parmesan or substitute with plant-based butter and vegan cheese.
