Ingredients
Lemon Blueberry Cookies
- 1 cup Unsalted butter, softened at room temperature
- 1 1/4 cups White granulated sugar
- 1/4 cup Light brown sugar
- 1 tbsp Lemon zest
- 1 Large egg
- 1 tbsp Fresh lemon juice
- 1/2 tsp Vanilla extract
- 2 3/4 cups All-purpose flour, sifted
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 3/4 cup Wild frozen blueberries
Lemon Sugar Coating
- 1/2 cup White granulated sugar
- 2 tsp Lemon zest
Instructions
- Prepare the dough: In a large bowl, combine the softened butter, white sugar, brown sugar, and lemon zest. Using a handheld mixer, beat for 3-4 minutes until the mixture is fluffy, scraping down the bowl sides as needed.
- Add wet ingredients: Incorporate the egg, fresh lemon juice, and vanilla extract into the butter-sugar mixture. Mix again for 1-2 minutes until fully combined.
- Combine dry ingredients: Sift together the all-purpose flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture just until combined.
- Fold in blueberries: Gently fold the wild frozen blueberries into the cookie dough without overmixing, ensuring blueberry streaks remain visible.
- Chill the dough: Using a 2 oz ice cream scoop, scoop the dough onto a parchment-lined baking sheet. Refrigerate the dough for 1 to 2 hours until completely chilled.
- Prepare lemon sugar: In a small bowl, combine white granulated sugar with lemon zest. Use your fingertips to rub the zest into the sugar to release oils and enhance flavor. Set aside.
- Preheat and coat: Preheat your oven to 350°F (175°C). Roll each chilled cookie dough ball in the lemon sugar mixture to coat fully. Arrange 5 cookies per baking sheet.
- Bake cookies: Bake the cookies for 16-17 minutes, turning the baking sheets halfway through for even browning.
- Shape the cookies: Remove cookies from the oven while still warm and use a large cookie cutter to gently round out any uneven edges.
- Cool completely: Let the cookies cool completely on the baking sheet before handling or serving to ensure they set perfectly.
Notes
- Spoon and level the flour: Avoid scooping flour directly from the bag. Instead, spoon flour into the measuring cup and level it with the back of a knife to ensure accurate measurement.
- Use a cookie cutter to shape warm cookies: For perfectly round cookies, gently press a large round cookie cutter over each warm cookie right after baking.
- Do not overmix when folding in blueberries to maintain streaks of blueberries in the dough.
- Chilling dough is crucial for proper texture and to prevent spreading during baking.
